According to a report by NPR on November 15, 2018, a study published in Nature's Scientific Reports in the same month shows that people's sensitivity to bitterness affects how much coffee they eat. The results of this study seem to be contrary to what we usually understand.

But as it turns out, the more sensitive you are to the bitterness of coffee, the more coffee you drink.

The researchers for the study used data stored at the UK Biological Bank (UK Bio-bank) for analysis. On the most influential and largest data platform in the world, more than 500000 people donate blood, urine and saliva samples that scientists can use to solve a variety of research problems. The volunteers also filled out questionnaires to answer a variety of health-related questions, including their coffee intake.

The researchers carefully analyzed the data of more than half a million participants to find people who were sensitive to one or more of the three bitter compounds. The three compounds are caffeine, quinine and propylthiouracil.

When participants cross-compared their self-reported coffee intake, the researchers found that people who were genetically more sensitive to the bitter taste of caffeine consumed more coffee than those who were less sensitive to the bitter taste of caffeine. But interestingly, people who were sensitive to quinine or propylthiouracil consumed less coffee.

Marilyn Cornelis, an assistant professor of preventive medicine at Northwestern University's Feinberg School of Medicine (Northwestern University's Feinberg School of Medicine) and one of the authors of the study, hypothesized that the discovery, contrary to intuitive perception, was not about taste, but about things associated with it. People may associate the bitterness of coffee with the fact that coffee provides more energy.

The study, published three years ago, shows that people who are less able to eat coffee tend to drink more coffee that seems interesting. But can realize from it: with the foil of bitterness, sweetness suddenly becomes so precious.
