However, the tapered cutter head does not produce evenly ground coffee, and if you put it under a microscope, you will notice a difference in the size of the coffee beans in the mixture. Although this will not affect the overall taste of your coffee, some people do prefer to use a flat bean grinder to make espresso. In fact, the flat cutter set became popular after it was launched during the 2013 World Barista Championships.
The flat cutter head grinder has two circular cutters, which are opposite to each other and have very sharp edges. This design allows beans to stay between cutters until they are perfectly (and symmetrically) ground, rather than conical cutters that allow beans to shoot out and maintain some integrity. When all coffee or espresso powder is of the same size, the taste is very simple, giving baristas more creative space.
However, flat cutters are louder than conical cutters and consume more energy and heat during grinding, making them less suitable for commercial or even household use. But when precision is needed, the flat cutterhead is a better choice.
