Most of the coffee names in Ethiopia are named after coffee producing areas. For example, the name of Yega Xuefei is Yega Xuefei, but what about Manning? It is neither the name of the producing area nor the name of coffee beans, nor the name of the variety, so what is it? Qianjie learned that mandheling's name is the phonetic error of Indonesia's Mantenin people. Why does this nation have anything to do with coffee? Manning's name is the result of a beautiful misunderstanding. During World War II, Japan occupied Indonesia, and one of the Japanese soldiers drank extremely good coffee in a local coffee shop. he immediately asked the shopkeeper the name of the cup of coffee, but because of the language gap, the shopkeeper mistakenly thought he was asking, "where are you from?" So I answered: "mandheling".

After the end of World War II, the Japanese soldier recalled the "Mantenin" he had drunk in Indonesia and asked Indonesian coffee customers to ship 15 tons of Mantenin coffee beans to Japan for him. As a result, the Japanese coffee market was very popular, so the name Mantenin has spread to this day. The local Indonesian businessman also founded the present-day PWN company, and PWN even registered the gold manning as a trademark, that is to say, only the gold manning of PWN is the gold manning in the real sense.

Mantenin Coffee Variety-- Iron pickup

Mantening coffee is an old coffee with elegant flavor, but its physique is weak, its disease resistance is poor and it is easy to catch rust leaf disease, and its fruit yield is low, which does not accord with economic benefits. Iron pickup coffee has its unique quiet and clean flavor, as well as balanced features, high cleanliness, but the only drawback is insufficient production, altitude requirements, at the same time easy to infection with leaf rust, and resistance to diseases and insect pests is not strong. Ypica has distinct characteristics, and it may be the most easily identified species. These plants are conical, with main vertical trunks up to 5 meters high. This height means that the distance between branches and nodes on the same branch of Typica is longer than that of other varieties. The bronze color of the top leaf of the iron pickup is one of the characteristics, with large beans, pointed oval or thin pointed shape, and some people call it "red top coffee".

As early as 1658, the Netherlands transplanted the offspring of the "European Ironka mother plant" to Sri Lanka, but the planting failed. Then, in 1699, the Netherlands was transplanted to Java from the Malaba coffee tree in eastern India. This trial was successful, and the iron pickup grew steadily in Java. In 1718, the Netherlands transplanted the successful iron pickup from Java to Sumatra and Sulawesi. After more than a century of breeding, when Indonesia's iron pickup was in its heyday, a leaf rust at the end of the 19th century swept most of Indonesia's iron truck, and later had to introduce a more disease-resistant variety, Robusta.

Mantenin coffee bean treatment method:

Manning's unique mellow flavor is inseparable from its treatment. Mantning mostly uses Sumatra's unique coffee bean treatment, the wet planing method. As the local weather is often dominated by Rain Water, with continuous typhoons, it is unable to achieve the good weather needed for the sun, and the local economy is not good, so it is also impossible to use the more expensive way of washing, thus giving rise to the wet planing method with local characteristics.

In the first stage, the peel and pulp were removed by a wooden peeling machine, and after fermentation for 3 hours, the moisture content was reduced to 30-50% of semi-dry and semi-wet.

In the second stage, the pectin and sheep skin were removed and the latter part of the drying process took 2-4 days, and the moisture content was reduced to 12-13%.

The wet planing method creates the special flavor of Manning. Qianjie Coffee believes that Manning and wet planing is a binding relationship, but today's coffee market is no longer static, even if wet ploughing is a feature of Manning, there will be other treatments. This one tends to be fruity, sweet and soft and sour.

Qianjie believes that the coffee beans treated by the sun will enlarge their own flavor, mellow, strong flavor, and will exude sweetness; washed coffee has obvious acidity, good cleanliness, moderate touch, and the quality of raw beans is the most consistent; honey-treated coffee beans have a better flavor, a balance of acidity and sweetness, and after the sun, the aroma of the coffee beans will also be magnified and mellow.

The Golden Manning Coffee Bean in the new season in the front street of Golden Manning is Ateng, which is the common name of the local people in Sumen, Indonesia for Katim Coffee. The name Ateng comes from the Aceh Tenggah region. Gold manning is actually produced by a company Pwani Coffee Company acquired locally in Indonesia, and then registered the name of gold manning. Only the manning produced by PWM is the authentic gold manning.

Tiger Manning

The specification of tiger Mantenin is more than 17 eyes, and the defect rate is less than 4%. Because the main varieties of tiger Mantenin are Kaddura and tin pickup. Kaddura has sour citrus and lemon flavors, while Ironpika has a long, sweet finish, giving Tiger Man a uniform taste and high cleanliness. Tiger Mantenin grows in Indonesia and is mainly produced in Sumatra, Java and Sulawesi. Tiger Manning is produced in Tiger Manor, so it is also known as "Manning Tiger" and "Sumatran Tiger Manning". The northern part of Sumatra is relatively high above sea level. Aceh, where Lake Tawa is located, and North Sumatra, where Lake Toba is located, are the main Arabica coffee producing areas.
