Free barista training and teaching, how to inject water and circle to make high-quality hand-made coffee? Teaching the skills of making coffee by hand.
Water injection in the form of circle in hand-brewed coffee has basically become the most extensive form of brewing, and the form of circle is also very diverse, some like to circle in small circles, some like to make large circles, some like to throw water quickly, and some like elegant and uniform circles. and, of course, irregular circles. Are there any obvious differences in the taste of coffee brewing with so many forms of circular water injection?
The difference between the size of a circle
Many people are obsessed with how much to circle. Take the V60 filter cup as an example, the coffee powder layer will generally show that the liquid surface is coffee foam, and the walls of the powder bowl after the coffee liquid flow will be relatively thin. The coffee powder layer of water injection around a small circle is generally shown as follows: the surface of the outer ring that has not been directly washed by water injection is still brown-black coffee powder, while the liquid surface of the inner ring that has been directly washed by water is coffee foam. After the coffee liquid flows, the "walls of the powder bowl will be thicker".
The difference between the two different flushing methods is that the coffee flavor is more active, light and comfortable in the way of water injection in a big circle, while the coffee flavor in the way of water injection in a small circle tends to be thick, full-bodied and concentrated.
When brewing shallow roasted coffee beans, in order to highlight the light and active acid, you can wash all the coffee powder on the surface in a circle from the center to the outside in the first stage of water injection after steaming, and there is coffee foam with uniform color on the surface. the subsequent water injection is around a concentric circle with a liquid surface radius of 1 inch. (the water injection loop in the rear section of the conical filter cup will break through the powder wall.)
On the other hand, the coffee beans roasted in depth tend to show a thick taste and a rich and calm flavor. You can use a small circle. Because deep-roasted coffee is rich in gas, even if you only inject water around a small circle, the coffee foam will gush out and cover the liquid surface. In the water injection after steaming, start the water injection from the middle, slowly circle outward, circle to 1 stroke 2 of the radius, and continue to circle the same size until the end of the water injection.
The characteristic of Hao Fang's water injection is "throwing water". It mainly uses the strength of the wrist to flush the pot and make the movement of water flow around the circle, which is very chic!
The elegant school of water injection is characterized by leisurely, the use of arm strength to control the hand pot to do horizontal circle movement, water flow control is very stable, circle speed is moderate, very cured.
What is the effect of these two styles of water injection on the flavor of coffee? First of all, it is clear that there is no difference between the two ways of water injection, and in addition, the style is a whole, and the parameters used in the bold punching method are also different from those of elegance, so it is naturally difficult to score high or low in flavor.
Therefore, from a practical point of view, bold and unrestrained water flushing and boiling water injection impact stirring strength will be stronger, coupled with fast circling, it is like turning on the drum washing machine-like extraction strength, so the extraction strength will be higher. But the bold and unrestrained punching method also has a very big risk, the learning skill is not refined, it is easy to extract unevenly, after using this style, you might as well check the condition of the powder layer to see whether the bottom is smooth and whether the thickness of the powder wall is uniform.
On the other hand, the elegant punching method will be weaker in stirring and weaker in extraction than the former (this is not a disadvantage). For beginners, slow water injection is easier to use, it is less difficult to control water, and there are fewer accidents, that is, more stable.
