Adhering to the spirit of inquiry, Qianjie borrowed an automatic brewing machine next door in the middle of the night. I wanted to see what kind of coffee flavor the machine could brew and how different it would be from our manual brewing coffee!

This automatic coffee brewing machine is only responsible for brewing, because the water temperature and weighing have to be measured manually. Of course, there are already fully automatic cooking machines on the market, including water temperature control to weighing can be automatically managed by the machine. But it doesn't matter! Because they cook in much the same way as this machine, turn on the turntable switch on the side, the pot will rotate evenly, and the hot water will be injected through the three holes at the bottom of the pot.

The water injection of these three holes will be affected by the water pressure. when the water pressure is high, the flow is in the shape of a water column, but when the water is filtered out quickly, the water pressure decreases and the water column will be transformed into a slow drip filtration. All right, needless to say, let's start preparing for the experiment. In the experiment, we are going to use the same bean and each side will cook it once. The following is the data used in this comparison. Coffee beans: beans are made of deep-baked "Indonesian Gold Manning".

Grinding degree: the normal grinding of hot punching, the bean grinder used in front street is EK43, and the grinding scale is 10.5, and the screening rate is 75%. Powder-to-water ratio: 1:15 (15g coffee powder, 225ml hot water) Water temperature: 88 °C for deep-roasted beans. Cooking method: one-knife cooking method. Filter cup: like the automatic cooking machine, the fan-shaped filter cup is used.

At the beginning of the experiment, manual cooking usually put too much, so this article will not repeat too much, put an automatic cooking process. 1. Place and wet the filter paper and pour in the coffee powder.

2. Turn on the switch on the side to let the water enter the rotational motion.

3. Pour 30ml hot water and stew for 30 seconds.

4. Put the pot into the frame.

5. When the steaming time comes to 30 seconds, pour the remaining water 195ml into the upper pot.

6. Shake after waiting for drip filtration, the total time is about 2 minutes.

7. Take a spoonful of coffee to detect the concentration.

The extraction formula of coffee concentration meter (TDS detector) is as follows: coffee solution concentration ✖️ coffee liquid weight ➗ coffee bean / powder weight = extraction rate.

Through tasting and comparison, it is found that the performance of the coffee brewed by the machine is not as layered as that brewed by manpower, not so thick, and more balanced, but Mantenin's flavor characteristics are shown, such as nuts, pine wood and chocolate. On the other hand, the coffee brewed by manpower is obviously rich in layers and has obvious creamy texture.

In fact, using a machine to brew, whether deep or light, as long as the parameters are set correctly, it can extract the core flavor of each kind of beans, and if the parameters are the same, the extraction of each cup of coffee is roughly the same. But Qianjie feels that the definition of good hand-made coffee is not only good, but also the core of the word-"human". The same bean, because of different people, different personalities, take different ways of brewing, the level of the water, the speed of the circle, will cause the coffee to show different flavor characteristics, not repetitive sameness, can make people feel the heart-secreting temperature, this is the most important thing.

Finally, regardless of the result, if the manual brewing of hand-brewed coffee is changed to machine brewing, then. Is it more appropriate to call this coffee "machine coffee"?
