To be honest, each type of bean has its own unique characteristics, so if Qianjie wants to talk about it, Qianjie likes every type of bean. But if you want to talk about a kind of bean that you have often drunk recently, it is Qianjie's new Qianjie Alida Manor·Anaerobic Sunning Kaduai that was secretly launched on Taobao Tmall in early October.
Why? Because it can definitely be called a "all-purpose food ration bean." Not only does it have a very versatile taste, but it also has a value for money that cannot be underestimated ~
Arida Manor·Anaerobic Sunning Kaduai believes that everyone is no longer unfamiliar with Arida Manor. It is not only an old manor in the Poquet region of Panama, but also a regular winner on the BOP (Best Panama Raw Bean Competition) list, and the quality of the coffee beans produced is very excellent. Because of this, Qianjie has shared many relevant introduction tweets, and a bean from Arida Manor has been included in the bean list for many years. Previously, the Alida Kaduai in the Qianjie bean list used sun treatment, but the Kaduai shared by Qianjie this time used anaerobic treatment and was the ASD that made Alida Manor famous.
The full name of ASD is Anaerobic Slow Dry, which translates to slow anaerobic sun exposure. In 2019, Alida Manor won the BOP crown again with ASD's Rose Summer, which was auctioned at a high price of $1029 per pound after the event. Naturally, Kaduai, treated in the same way, must have an unusual flavor. Kaduai was shared some time ago ("Kadura and Kaduai"). It is a variety planted in many estates including Emerald and Elida, both because it will grow better than regular Arabica, but also because it has higher yield and excellent taste.
As for ASD/anaerobic slow sun treatment, in fact, we can understand it directly from the literal meaning. The coffee fruits will be thrown whole into a sealed barrel for 120 hours of anaerobic fermentation (five days). Then, after the anaerobic fermentation is over, the coffee fruits will be transferred to a drying bed for at least 5 weeks.
The long fermentation and drying time has given the coffee beans a more complex flavor. In order to fully demonstrate this uniqueness, Qianjie used several different curves to bake and conduct cup testing. In the end, the moderately shallow is the baking degree of Ailda Anaerobic Sun-cured Kadui selected and put on shelves. At this degree of baking, it shows a relatively high sweetness. It is not only suitable for making hand-brewed coffee, but also no less inferior to making Italian milk coffee. Since the baking degree is moderate to shallow, when Qianjie uses hand-flushing method to make it, it will use a water temperature of 92°C, a powder-to-water ratio of 1:15, and a sieve of 75%~80% of No. 20 sieve., and an extraction time of 2 minutes (15g) to cook it.
As introduced by Front Street, the Arida Kaduai rushed out in this way has an extremely excellent sweetness, slightly sour, with dark berry flavors such as blueberry and blackcurrant, as well as the mellow aroma of chocolate and caramel. The overall taste is clean and smooth, and the lingering fragrance is very long-lasting. When it is used in making espresso, it will use 20 grams of beans, a powder-to-liquid ratio of 1:2, and the time will be controlled within about 30 seconds.
This parameter allows us to extract a balanced espresso coffee. When we drink it, we can feel the aroma of dark berries and chocolate that is stronger than that of hand-brewed.
Because this bean is not baked too lightly, we can copy the original espresso formula to make it. For example, the ratio of coffee to water in the American coffee you originally made with medium and deep baked beans is 1:4, so here you can also use 1:4; the ratio of Dirty, the ratio of Australian white, and the ratio of latte are all the same. The reason is that Qianjie wants to make a cup of latte here, Qianjie uses a ratio of 1:5, and the amount of milk added to 40ml of coffee liquor is 200ml.
The latte made with this Arida Kaduai has a very unique taste, with a dominant sweetness and a very weak acid. The flavors are milk chocolate, blueberry, and caramel. The taste is mellow and smooth, with obvious and long lingering aftertaste. Very good ~
