The reason why people often compare Rose Summer to Yejia Shefi Plus is because they have very similar flavor characteristics. The variety rose summer originated in Panama. In the 2004 Best Panamanian Raw Bean Competition, Jade Manor won the championship with rose summer. Guixia also attracted countless fans because of its excellent flavor, so that later, some people even made a special trip to Ethiopia, the birthplace of Guixia, to find Guixia. Yes! Like many Arabica coffees, Rose Summer originated in Ethiopia. In 1931, a British expedition went deep into Ethiopia, the genetic treasure house of Arabica, to find coffee varieties that carried disease resistance. They collected coffee along the way and named it after the collection place. Rose summer is one of the many varieties collected in Ethiopia's Rose summer forest.

Later, Guxia moved from Ethiopia to the Coffee Research Institute in Kenya, and then to Uganda and Tanzania in 1936. It was introduced to Costa Rica in 1953 and was given the number "T2722" and included in the Costa Rican CATIE coffee archives. However, because rose summer does not have the characteristics of high yield, on the contrary, the yield will be half less than that of conventional Arabica seeds, which conflicts with the concept of quantity being the main focus of farmers at that time. Therefore, for a long time after the discovery of rose summer, rose summer was not widely planted by people. It was not until Rose Summer spread from Costa Rica to Panama that Rose Summer finally had its day. As everyone knows, Guixia has created a legend with its excellent flavor.

The white flowers, citrus fruits, and the freshness of honey and green tea are the flavors that surprised everyone at the event, and this has also become the iconic flavor of Rose Summer. What is Yejia Shefi? Although everyone is familiar with Yejia Shefei coffee, it is different from Guixia in that Yejia Shefei is not a variety name, but a place of origin. The so-called Yega Shefi coffee refers to the coffee produced in the Yega Shefi region.

Yega Shefi is located in southern Ethiopia. It was originally part of the sub-production area of the Sidamo production area. Later, the entire production area was divided because the flavor of Yega Shefi coffee was too unique. The average altitude of this production area is high, ranging from 1,700 to 2,200 meters, making it one of the highest altitude production areas in Ethiopia. The average temperature is low and the altitude is high, which extends the ripening time of the coffee cherries and gives coffee more time to accumulate more sugar. More sugar can be transformed into richer flavor substances. Coupled with the unique terrain and planting system, the quality of coffee is further improved, so the coffee produced here not only has excellent flavor but also has a strong taste. Yejia Xuefei can really be said to be an excellent coffee growing paradise.

As Front Street often shares, among Yega Shefi coffees, washed Yega coffee is particularly famous. In the early days of Yega Shefi, like other producing areas in Ethiopia, coffee was processed in the sun. However, in order to further improve the quality of coffee, the government introduced water washing treatment from Jamaica in 1972. Water washing treatment will first remove the fruit gum from the peel, pulp, and then put the coffee beans into the sun for drying, which greatly shortens the drying time of the coffee and reduces the probability of qualitative change. At the same time, because the degree of fermentation is not so deep, the processed coffee will have a relatively clean performance, showing more of the flavor of the origin and variety itself. This opened a huge gap between Yejia Shefi's coffee and other coffee producing areas.

Because Yejia Shefei coffee is extremely classic, it is naturally indispensable for Qianjie bean lists. There are two Yejia Shefi coffees on the bean list in Qianjie. One of them is sun-treated Qianjie Yejia Shefi Red Cherry, and the other is washed Qianjie Yejia Shefi Fruit Ding. If you want to taste the most classic Yega Shefi flavor, then these two coffee styles are recommended to try, especially the washed Yega Shefi Guodin. Qianjie mentioned earlier that washing treatment can better present the flavor of the place of origin and the variety itself, so we can taste the purest Yaga Shefei flavor on Qianjie Yejia Shefei Guodin. So what is the flavor of yega snow?

It is the elegant white flower fragrance, fresh lemon, and clean green tea. This is what everyone calls the "Yejia Shefei flavor." How about it, does it sound very familiar? That's right! This is similar to the rose summer flavor mentioned on Qianjie earlier. It has the fragrance of flowers, citrus acids, and clean tea. Therefore, people often compare the rose summer that was born later to Yejia Shefei Plus. But there is still a certain difference between the two!

Compared with Yejia Xuefei, the overall taste of Guixia will be more round and full. Because Guixia beans are larger, most bakers will conservatively bake it slightly deeper in order to allow the bean core to be fully developed during baking. This will not only make the coffee taste fuller, but also give it a better sweetness. The flavor of Naye Chevy coffee is relatively fresh, because mainstream Yaye Chevy coffee is lightly baked, so it does not carry too much roasting aroma like caramel. We tasted more elegant scents such as lemon and green tea.
