Factors affecting the quality of espresso
We divide the production process into several elements based on their impact on coffee quality, which facilitates the organization of a large number of materials, not to say that these elements are independent of each other or can be defined separately.
For example, there are many small factors that affect pump pressure, we just assume that they are normal, the valve seal in the machine is intact, and the head seal ring is soft and flexible to ensure good sealing performance. We also assume that the pumps are working properly, and so on. In reality, everything changes at different times. Therefore, do not fix your knowledge on these elements we divide. Read this book to understand the basics and reorganize the elements to create your own espresso making process.
In the practice of making espresso coffee, it is difficult to isolate one factor when several factors go wrong simultaneously. Different factors intersect and influence each other. According to Dr. Ernesto Illy, there are thousands of possibilities for error, and only one combination gives the best results. To get a good espresso, you have to think about not just one factor, but all of them and how they relate.
Here are some common factors that affect espresso:
Environmental factors: humidity, temperature, light
Ingredients: water cleanliness and mineral composition, coffee freshness, espresso roasting and formulation
Equipment factors: espresso grinder, espresso machine, espresso capacity, equipment cleaning, pumping
Production technology: coffee powder compaction tools and technology, coffee powder filling, production time, brewing water temperature, grinding adjustment
