I. Origin

My first time baking beans is to use a pan, accumulated more than 20 times of experience, although turning beans very quickly, but because can not cover the lid, the heat effect is very bad, beans heated unevenly, the results are not ideal, has been thinking hard about solutions. One day in the hardware store to see a kind of fishing net (as shown in the picture), thought if two can be combined, and in one of the sides covered with aluminum foil paper, should be able to effectively improve the heat problem. I bought two of them and made them into "net bakers."

II. Making a net roaster

I will first remove the plastic handle of the fishing net, by the way, this kind of fishing net, some are very fine metal net, silver skin is not easy to fall off when baking, so you should buy a slightly thicker one, mesh about 0.15 cm.

Fill one of them with about 150g of raw beans, and then tie the two nets with thin iron wire (or copper wire).

Cover one of the nets with aluminum foil and try to keep the foil close to avoid falling off during baking. In fact, you can also fold several layers of aluminum foil paper between the mesh and the outer layer of aluminum foil paper, the insulation effect is better.

Finally, tie the cloth around the handle to prevent it from burning.

The "net dryer" is initially completed and ready to bake beans.

Then prepare cassette gas stove, electric fan, metal tray, small chair, it is best to move all outdoors, lest silver skin falls all over the ground, not easy to remove.

Third, start baking beans

Baked beans generally go through several processes such as dehydration, first explosion and second explosion, all of which are about 15 to 40 minutes. According to the characteristics of green beans and personal preferences, it is not necessary to bake the whole process. If you like the fragrance taste, you can stop in the middle of the explosion or after the explosion; the strong flavor can enter the second explosion, even after a period of time. Those who try to bake at first may burn because of poor fire control, or they may be too careful and last for more than thirty or forty minutes. After a few baking experiences, it is ideal to try to keep the baking time within 10-15 minutes.

I am a very unfocused person. I often do two things at once. When I roast coffee beans, it is the same. I like to think of small jokes and stories to pass the time. I will also think about things at work. I often inspire good ideas. It is an extra harvest of DIY baking beans. Here's how one of my bakes went.

Raw beans and utensils are ready, turn on the gas stove, low fire, close the bottom of the net roaster to the fire source, start to swing left and right up and down, the amplitude is about 20 cm, shake up and down once every five times, so that the coffee beans in the net are heated evenly.

After 2-3 minutes, increase the firepower, part of the silver skin began to fall out of the net like dandruff, this stage is in dehydration. If you turn the roaster upside down, you can see that the green beans turn brown. At the same time, there was a slight sweet smell coming out, which became stronger and more obvious. This smell was really wonderful. Only the people who baked beans had the opportunity to smell it, which was the first encouragement to the baked beans. Fragrance sweet smell always reminds me of romantic love, the ancients gave each other red beans (Acacia beans) to express affection, there are poems as evidence:

Red beans grow in the south, spring to send a few branches;

May you gather more, this thing is the most missing.

Modern people often associate coffee with love and romance, so I wrote a limerick:

The sweet fragrance gradually added a faint burning smell, and it was about to enter the first explosion stage. Without the assistance of a thermometer, it was impossible to effectively control the temperature increase. The timing of the first explosion was difficult to predict. It was inevitable that the heart would be impetuous. The shaking speed of his hand unconsciously increased, and the cracking sound was like a bean crying and wailing. Suddenly, he remembered Cao Zhi's seven-step poem:

Boil beans burning beans, beans crying in the kettle;

They were born from the same root, so why should they fry each other too fast?

I have another doggerel:

Baked beans burn gas, beans jump in the net;

When will it explode? He was a little anxious!

Finally heard a "peel" sound, a burst began! The sound of peeling gradually became more intense, and there was also a very light white smoke coming out of the bean dryer for about one or two minutes. If you want a light flavor, you can stop baking from the beginning to the end of the explosion. If you don't stop the fire and keep baking, you'll go into a second explosion. Unless the firepower was deliberately reduced, it only took a few minutes for the first explosion to end. It could be said to be a fairly smooth process. Shi Yun:

After the first explosion, the sound was temporarily suspended, and the firepower was not reduced until the second explosion.

Soon, the sound of "splitting ya, splitting ya" came, much softer than the sound of the first explosion, and the second explosion began. A second explosion is usually accompanied by a lot of smoke, so I turn down the heat or raise the roaster to avoid overheating and burning the beans. The second explosion lasted about two minutes, and then baked, that is, a heavier deep-baked.

Because the metal wire mesh of the fishing net heats up quickly after heating, it is easy to scald the beans without paying attention, so the shaking cannot be stopped, and it is best to pay attention to the heated parts from time to time. As long as you pay attention to this point, the beans baked in the fishing net are much more uniform than those baked in the pan.

When the roast reaches the desired temperature, it's time for the beans. The action of the next bean should be fast, the purpose is to quickly cool down, so as not to dissipate the aroma. When baking the beans, as long as the aluminum foil paper is removed, put it in front of the electric fan and blow it straight. The fishing net keeps rotating. After about two minutes, the fishing net is not hot. Move it to the iron tray and loosen the iron wire and cloth. Then pour the finished beans into the iron tray to continue cooling. When the beans roll into the tray, the sound of knocking out is very pleasant. After dozens of minutes of hard work, finally there is a harvest! Pipa Xing describes the melodious music as "noisy and mixed, big beads and small beads fall on the jade plate", but I am now "Xi Li crash urgent beans, big coffee and small coffee fall on the iron plate"!

Can't wait to see if the beans are unevenly heated? Take one or two and bite open with your teeth to see if there is any external coke. Then throw the beans into the mouth and chew them, along with saliva, close your eyes and feel the taste of the beans.

When the beans reach room temperature, they can be enjoyed or stored. As for whether they want to nourish the taste? That's another topic for discussion.

IV. Conclusion

The net roaster is a great way for beginners to explore the field of roasting beans at a very low cost; whether roasting can fully express the advantages of each bean, at least it is also a convenient way to enjoy fresh coffee beans. But after all, there are many variables in the baking process that are difficult to master. Compared to the formal bean dryer, it is much simpler. Of course, this can be improved by using a thermometer to control the temperature, and the effect may be limited. So if you want to get into the bean baking hall, buying a machine is the right way.
