Researchers from the School of Pharmacy at the University of Georgia studied the preventive and therapeutic effects of chlorogenic acid on insulin resistance and fat accumulation in mice. The mice were fed a high-fat diet and supplemented with chlorogenic acid for 15 weeks. Then the body weight, blood glucose, insulin and liver lipid content of the mice were measured.
The results show that chlorogenic acid is not only an effective antioxidant but also has anti-inflammatory effect. Studies have shown that chronic inflammation associated with obesity can lead to diabetes, heart disease and metabolic syndrome. Chlorogenic acid can reduce inflammation.
The study also found that there are high levels of chlorogenic acid not only in coffee, but also in some fruits and vegetables, such as apples, pears, tomatoes, artichokes, potatoes and blueberries.
