Ground coffee that is too fine causes water to pass too slowly, leaching too much, and coffee to taste too bitter.
Coffee making method: 7 grams (a cup of coffee standard amount of powder) coffee powder into the brewing wrench, in the grinder handle with moderate pressure, in order to let the water evenly through the coffee powder, ensure that the right amount of coffee extract. A cup of real espresso is made up of one-third coffee (one espresso), one-third hot milk and one-third milk foam (the liquid in the cup is half espresso and half hot milk).
Milk foaming Note: Be sure to use cold milk, hot milk is difficult to foam. Pour the milk into a clean stainless steel cup, do not use other containers, because metal is a good conductor of heat, easy to transfer the temperature of the milk to the hand during the foaming process, so as to control the temperature of the milk in time to prevent the milk temperature is too high or paste, avoid scalding guests and make bad taste coffee.

When the steam valve is opened for a certain limit, the operator should hold the cup handle with one hand and move the milk cup up and down with the other hand to let the steam enter the milk to be foamed (the hand holding the cup wall will feel the temperature of the milk at this time).
III. If the milk is too hot, stop immediately to avoid boiling it. Whether the milk foam is good or not, the steam valve must be closed before stopping, and then the steam pipe must leave the milk surface to avoid burns.
IV. When frothing is complete, set the teat cup aside to separate the milk from the foam.
v. One espresso. (Put a 7-9 gram serving of coffee powder into the brewing wrench, press the press handle of the grinder with moderate pressure, screw the wrench onto the coffee machine, and press the brewing button. 28 seconds after pressing the button, the cup should contain 1.5 ounces)
vi. Then add milk to the coffee cup. Note: Use a spoon to block the milk foam, pour the milk into the cup, and spoon the milk foam onto the liquid. Sprinkle cinnamon or chocolate powder on top of the milk foam as a finishing touch. However, in Italian tradition, there is no custom of adding other spices, and it is up to the restaurant or the guests to choose whether to add or not.
