El Salvador

El Salvador coffee has a milder, less acidic profile with classic mid-American flavors. The best high-altitude grown Salvadoran coffees are obtained from the Bourbon and Parker Mora coffee trees. This coffee is aromatic, complex, lively and pleasantly mild.

Ethiopia

Ethiopian coffee is a very complex coffee variety. The best of these coffees are dry process coffees (hara beans) with medium viscosity and strong acidity, with a coarse, fruity and alcoholic quality. The best washed Ethiopian coffees (yerba sherphine, sidamole) are low viscosity but expose complex floral or citrus symbols.

Gemma, Gemma, Gemma. A washed gin majima can be an excellent low-acid coffee. Dry-processed coffees are a lesser coffee, they often exhibit wild or medicinal characteristics, and they are not often traded as specialty coffees.

Kimby. A wet-processed coffee from western Ethiopia.

Limarim Limarim . A market name for a famous aromatic, floral and fruity wet process coffee from south-central Ethiopia.

Sidamo, washed Sidamo. A market name for a well-known low to medium viscosity wet process coffee with floral or fruity flavours from southern Ethiopia.

Yerga Sherphine. The market name for one of Ethiopia's most famous washed coffees, known for its fruity or floral acidity and elegant, complex flavor.

Guatemala

The best Guatemala coffees have a very pronounced pungency or smoke that sets them apart from other coffees. They have a high acidity, and the aroma or smoke is distorted as sour. The best Guatemala coffees are medium or high viscosity with rich flavor. The strict hard beans rate coffee from the central highlands (Antigua, Adelaide) to exhibit rich pungency or floral acidity and excellent shape. Coffee from mountainous regions is susceptible to either Pacific (California State) or Caribbean (Guatemala) climates and exhibits less acidity and more fruity flavors. Famous Guatemala estates include San Miguel, Capitillo, San Sebastian, and Ross Volcanos.

Honduras
