How would you like your coffee? Whether it is a three-in-one simple brewing coffee bag, or a professional coffee that is self-grinding, the diversity of coffee fascinates many people, and there is even a saying that one can see a person's personality from the coffee one drinks, which shows that there are really many types of coffee.

How did all these coffee varieties come about? If you are a professional coffee beginner, I believe you will be confused by the various roast degree names of coffee, yes, the diversity of coffee comes from roasting. For example, city, full city, French, Espresso and other coffee names are all based on the different roasters used and the different regions of production. Even if the coffee beans look the same color, coffee can have completely different flavors, whether it is the type of coffee beans selected, the heat and roasting method, or the length of roasting time, many reasons are the main factors that determine the final coffee flavor. Roasting can be said to be a major part of the field of coffee.

During the roasting process, coffee beans will undergo a series of complex chemical changes. The whole roasting process takes about 20 minutes to half an hour. At the beginning, after about 15 minutes of roasting, the green coffee beans will lose their original humidity in this step and burst like popcorn. The volume of the whole coffee beans will expand more than twice and show a light brown color after light frying. The roasting time is then increased further depending on the type of coffee bean and the degree of roasting desired. In this step, the color of the coffee bean changes to various shades of brown. Finally, after baking is completed, it can be cooled directly with cold air or directly sprayed with water to complete the baking process.

After roasting coffee beans are mainly divided into four categories, namely light, medium, deep and extra deep. Light fried coffee beans appear light brown, mostly with a strong smell, brewing coffee has a high acidity, but alcohol may not be able to perform so well. Medium-fried coffee beans are very rich in alcohol, but at the same time can retain most of the acidity. The beans are dark brown and the acidity is replaced by a slight bitterness, sometimes producing a spicy taste. Deep fried beans appear black, with a charcoal bitter taste, the relative alcohol is not so strong.
