My first time to bake beans was in a pan, and I accumulated more than 20 times of experience. Although I turned the beans very quickly, because I could not cover the pot, the heat accumulation effect was very bad, the beans were heated unevenly, and the results were not ideal. I have been thinking hard about the solution. One day I saw a fishing net in the hardware store (pictured). I thought that if the two branches could be merged and covered with aluminum foil on one side, the heat accumulation problem should be effectively improved. At present, I bought two to go home to make a "fishing net roaster".

Second, the production of fishing net roaster

First of all, I will remove the plastic handle of the fishing net, incidentally, this kind of fishing net, some are very fine metal mesh, the silver skin is not easy to fall off when baking, so we should buy a thicker one with a mesh of about 0.15 centimeters.

Fill one of them with about 150g raw beans, then fasten the two fishing nets with thin wire (or copper wire).

Cover the outside of one of the fishing nets with aluminum foil and try to keep the aluminum foil close to prevent it from falling in the middle of baking. In fact, you can also fold several layers of aluminum foil and plug it between the mesh and the outer layer of aluminum foil for better heat preservation.

Finally, tie the cloth to the handle to prevent burning.

And then prepare cassette gas stove, electric fan, metal tray, small chair, it is best to move all outside, lest the silver skin fall all over the ground, it is difficult to remove.

Start baking beans

Baked beans will roughly go through several processes such as dehydration, first explosion, second explosion and so on, and the whole process is about 15 to 40 minutes. According to the characteristics of raw beans and personal preferences, it is not necessary to finish the whole process. If you like the fragrant taste, you can stop it halfway or after the first explosion, while the strong flavor can enter the second explosion, or even last for a period of time before dropping the beans. Those who first try to bake may be scorched because of poor fire control, or they may be overcautious and last more than 30 or 40 minutes. After I have accumulated several baking experiences, it is ideal to try to limit the time to 10-15 minutes.

I am extremely inattentive and often do two things at once, and it is the same when baking coffee beans. I like to think of little jokes and stories to pass the time. The raw beans and utensils are ready, turn on the gas stove, reduce the fire, put the bottom of the net roaster close to the fire source, and begin to swing up and down about 20 centimeters, shaking up and down every 5 times, so that the coffee beans in the net are heated evenly.

After 2-3 points, increase the firepower, part of the silver skin began to fall out of the net like dandruff, this stage is dehydration. If you flip the roaster, you can see that the color of raw beans changes to yellowish brown. At the same time, there is a slight sweet smell coming out, the smell is getting stronger and stronger, more and more obvious, this taste is really wonderful, only people who bake beans have a chance to smell it, as the first encouragement to the baker. The sweet smell of fragrance always reminds me of the romance of passionate love. The ancients gave each other red beans (Acacia beans) to express their feelings, as evidenced by poems:

With the gradual addition of a shallow scorched taste to the sweet smell, it is probably about to enter a stage of explosion. Without the assistance of a thermometer, it is impossible to effectively control the rise in temperature. The timing of the explosion is unpredictable, the heart is inevitably impetuous, and the shaking speed in the hand is unconsciously quickened. The sound of rattling, as if beans were crying and crying, suddenly remembered Cao Zhi's seven-step poem:

Boiled beans burn a bean pan, beans cry in the pot

I was born on the same root, so why should I be in such a hurry?

When will it explode? I'm in a bit of a hurry!

Finally, I heard the sound of "peeling", and the explosion began! the sound of "peeling" gradually concentrated, and there was a light white smoke in the bean dryer, which lasted for about a minute or two. If you want a fragrant taste, you can stop baking from the beginning to the end of the explosion. If there is no cease-fire and continues to bake, it will enter the second explosion. Unless the firepower is deliberately reduced, the end of the first explosion to the second explosion is only a few minutes, which can be said to be a fairly smooth process. Shiyun:

After the first explosion, the sound is temporarily suspended, and the firepower is not reduced until the second explosion.

Soon, the sound of "splitting, splitting" came, which was much less than the sound of the first explosion, and the second explosion began. The second explosion is usually accompanied by a lot of smoke. At this time, I will turn the firepower down or raise the roaster to avoid overheating and scorch the beans. The second explosion lasted about two minutes, and if you bake it again, it will be a heavier one.

As the metal wire of the fishing net heats up quickly after being heated, it is easy to burn the beans if you do not pay attention to it, so the shaking cannot stop, and it is best to pay attention to the frequent changes in the heated parts, as long as you pay attention to this point, the beans baked in the net style are much more uniform than those baked in a pan.

When the baking reaches the required heat, it's time to drop the beans. The action of dropping beans should be fast, and the aim is to cool down quickly so as to prevent the aroma from escaping. When baking beans with a net, as long as you take off the aluminum foil and blow it in front of the fan, the net keeps turning. After about two minutes, the net is not hot. Move to the iron tray to release the wire and cloth, and the finished beans can be poured into the iron plate to continue to dissipate heat. When the beans roll into the plate and knock out the sound, how pleasant it is, tens of minutes of hard work, and finally a harvest! The lute line describes the melodious sound as "the chirping sound is interlaced with each other, like a string of big beads and small beads falling off the jade plate." at this time, I am "rattling down the beans, the big coffee and the small curry falling on the iron plate"!

Can't wait to see if the beans are unevenly heated? Take one or two and bite them open with your teeth to see if there is any external coke and endogenesis. Then throw the beans into your mouth and chew them up. With saliva, you can feel the taste of beans with your eyes closed.

The net roaster has a very low investment and is a good choice for beginners to explore the field of baking beans; regardless of whether baking can fully show the advantages of each bean, at least it is one of the convenient ways to enjoy fresh coffee beans. But after all, there are many factors that are difficult to master in the baking process, which is much more crude than a formal bean roaster. Of course, this can be improved by using a thermometer to control the temperature, and the effect may be limited.
