Some elements are difficult to identify and need to go deep into the nostrils. Cupping your hand on the cup can only add the aroma of your hand and any combination that has been in contact with it. The length of this olfactory sample is important because some elements are difficult to identify and some need to be pulled into the nostrils to be detected. To understand espresso, you may need to do this over and over again.
The aroma of espresso should be profound, rich and complex. There should be no faint burning or chemical smell. If it smells like charred rubber, it's best to put it down and walk away, because it shows the use of cheap Robbins, actually putting it down and walking away.
How to taste

Taste

When you taste espresso for the first time, you may expect it to have many different flavors until the flavor disappears. The smell will dance, from the front of the tongue to the back, and finally down the throat. Try to feel the "taste of coffee"below", looking for simple, such as flowers, fruit, wood, and the smooth and pleasant taste.
Aftertaste
