Honey treatment method
Recently often see the word, honey treatment. Think that there is a new processing method, take a closer look, in fact, it is not, it is semi-washing method. After the coffee fruit is picked, the pulp is removed, and then the beans with the skin are sunburned until they are completely dry. This is the honey treatment.
In fact, there are no more than three ways to handle coffee: washing with water, washing with half water, and drying in the sun. The honey treatment method has changed a little bit on the basis of the original semi-water washing, that is, the final process is the whole sun drying, while the former semi-water washing method will be dried by machine after drying the beans, and the honey treatment is directly dried until the last thorough drying. If you think about it in this way, you also know that the skin mucosa is still wrapped in beans, and the taste of the fruit will be preserved more completely. in this way, the beans will also increase their sweetness and aroma.
Whether it is honey treatment or sun treatment, it is a very troublesome thing to do in the sun. Be sure to keep a large number of people watching the beans and rolling them so that the beans don't stick together or get moldy! This is also the reason why some beans are treated with sun or honey, but the beans are a mess. Beans handled in this way should be closely watched and carefully watched. Otherwise, it was supposed to be a way to increase sweetness and aroma, and ended up with a bunch of smells.
