Let's start with the problem itself!
Personally, I don't think the esp made of "uniform density in the powder bowl" will taste better.
Especially for the concave structure of a single powder bowl, unless the equipment in recent years uses the standard of 7g powder many years ago, it will appear that the flow of water through the middle of the pressed powder is obviously shorter than that through the outer ring, which is easy to form a channel and the extraction of the outer ring is insufficient.
My experience is to make a single piece of powder into a hilly shape, and then fill it vertically, so that the "density" of the powder in the middle is higher, slightly lower on both sides, and extracted as evenly as possible, but this is not very intuitive and requires more testing and experience!
Let's get back to the point.
About the bean grinder
A good bean grinder is indeed the only guarantee for the stability of esp, and the uneven grinding of the bean mill should be discussed in several points:
1 the type of cutter head, flat knife grinding is more uniform than cone knife grinding, although the cone knife is not uniform, but in general, its non-uniformity is also stable within a standard, that is to say, the powder seen only once may be slightly uneven, but the uneven degree of each grinding is still at the same level. in recent years, it is considered that low calorific value, coupled with uneven grinding can sometimes bring more rich flavor. Conical knives are used more and more in the competition!
The amount of beans in the soybean warehouse should not be small, and too few beans will make the grinding uneven.
3 the knife head has not been cleaned for a long time, or it is damp, just clean it.
4 the cutter head is damaged, change the cutter head.
About the powder.
Let the powder fall in the middle of the bowl instead of on one side as much as possible.
2 gently pat or pier flat
3. Grinding powder while dropping powder as much as possible

The correct method of filling Italian Coffee Powder Press Coffee Powder
When making Espresso filling powder, ideally, the coffee powder is evenly distributed before pressing, and then pressed. The coffee powder has a flat surface and uniform density, so that the water extracted from the coffee can pass through evenly. Extract all the aromatic components from the coffee powder. The coffee powder is pressed too loosely. After the extraction, there must be a perforated hole in your pressed powder. If the pressure is too tight, pressed powder
