When the fruit of the coffee tree is picked, the four layers of skin wrapped around the coffee beans need to be removed in order to finally get the coffee beans needed. The main methods to remove the outer epidermis of coffee beans are "wet treatment" and "dry treatment".

1. Wet treatment:
Wet treatment is also known as "water washing", and coffee beans processed in this way are called "water washed beans" (Washed Beans). The process of processing coffee beans with this method is as follows:
(1) picking: picking coffee beans is mostly manual work. When picking, select mature coffee fruits of similar size so that they can be processed by a peeling machine.
(2) cleaning: soak the coffee fruit in water, first remove the overripe coffee fruit (peeling by dry treatment), and other coffee fruits need to be soaked for 12-36 hours.
(3) peeling: the soaked coffee fruit will become soft, removed and put into the peeling machine for treatment. At this time, the pulp of the coffee fruit will also be partially removed.
(4) remove the pulp: put the coffee fruit which has not completely removed the pulp in the washing tank and rinse repeatedly with water to remove the pulp that remains on the surface of the fruit.
(5) cleaning mucous membrane: put the pulp-removed fruit into a clean cleaning tank and wash the mucous membrane on the surface of the fruit (coffee bean) with water.
(6) soaking screening: soak the washed coffee beans in water to remove the coffee beans floating on the water due to overripening.
(7) drying: when coffee beans are exposed to sunlight for 1-3 weeks, or dried by machine, the moisture content of coffee beans is reduced from 50% to less than 12%.
(8) Storage and polishing: dried coffee beans can be stored in storage. Usually before sale, the coffee beans need to be polished with special equipment to remove the silver skin remaining on the surface of the beans.
2. Dry treatment:
After the coffee fruit is fully ripe, it will fall off from the coffee tree. After the natural drying of the coffee fruit, the fruit (coffee beans) will come out of the coffee fruit and become mature coffee beans. This most primitive method of obtaining coffee beans eventually evolved into the "dry processing" of coffee beans, also known as "drying processing". Coffee beans processed in this way are also known as "Dry Beans" or "Natural Beans". The basic process of dry treatment of coffee beans is as follows:
(1) picking: use a special machine to pick coffee fruits.
(2) drying: put the coffee fruit in the sun for 2-3 weeks, or you can use a dryer to dry it. After the humidity drops to 12%, store the dried coffee fruit in the cellar.
(3) shelling: remove the fruit shell with a special sheller.
(4) de-coating and polishing: coffee beans usually retain the silver skin on the surface of coffee beans before they are sold. Only when you get the shipping order will you remove the silver skin and polish the surface of the coffee beans.
