There are three most commonly used methods of making coffee, one is siphon, the second is high-pressure steam extraction, and the third is drip filtration. What I am teaching you today is a relatively simple way to use a mocha pot to make coffee, that is, the high-pressure steam extraction method mentioned above. This method first appeared in Italy. Large commercial coffee machines generally use this method to make coffee. This kind of coffee is called Espresso. What I am introducing today is a simplified version of mocha pot brewing.

The mocha pot is generally divided into three specifications: two people, three people and five people. Today I use a BIALETTI pot for three people.

The main components of step 1:Moka Pot-upper pot funnel filter, lower pot. Espresso means "very fast" in Italian and is characterized by the instant extraction of coffee liquid using steam pressure. Whether the coffee tastes well or not mainly depends on the freshness, grindness and heat control skills of the coffee.

It is best to make espresso with beans with a thickness of 1 to 1.5, light or moderate is not very suitable for this method! Add water according to the amount above, add cold water (you can also heat water if you want to) to make coffee, you must use pure water, not mineral water! Because the minerals in the water will shadow the taste of coffee, there are no conditions and there is no way. Note that the amount of water should not exceed the pressure relief valve.

Step 2: pour the ground coffee into the powder trough, nine minutes full, and gently pat the powder trough with your hand to distribute the coffee powder evenly in the tank. After tapping, the coffee powder will drop slightly, and we can just make up the left. after the replenishment, gently smooth the flour by hand or gently press it with your own powder press (note: do not press this is very important) and put a piece of No. 6 filter paper.

Step 3: put the installed powder trough in the lower pot to see if it matches, or if there is a foreign body such as coffee dregs stuck in the middle and the edge of the powder trough, so that after the mocha pot reaches a certain pressure, the high temperature gas will leak out and cause the operation to fail. If you don't have it, you can put a piece of filter paper (No. 6 filter paper in a pot for three). Twist the upper and lower kettle tightly, do not grasp the handle with your hand, it is easy to twist the handle. After confirming that it is tightened, it can be boiled on the gas stove, the best is the special coffee gas stove as shown in the picture, there is no and can be ~ some stainless steel mocha pots can be boiled on the induction cooker, but the star anise pot is not, it is made of aluminum alloy, it can only be heated by a special gas stove or gas stove, and the fire can not be heated beyond the bottom of the pot so that the high temperature will damage the kettle!

Step 4: heat the mocha pot over medium heat, and the mocha kettle hisses when the water in the lower pot boils, which means that the water in the lower pot has boiled into a high-pressure, high-hot air-water mixture going up through the duct of the powder trough, through the coffee powder in the coffee trough, the coffee liquid is extracted and injected into the upper pot along the tube.

Step 5: the next step is to control the fire temperature, do not let the water in the pot come up all at once, to control the speed, it depends on your own experience. Different beans have different control methods, and not all of them are suitable for the same kind of beans. However, what we are talking about today is the method of cooking by lazy people, which is not very important. When the coffee liquid flows into the pot, you can turn off the fire! Don't forget to turn off the fire because you don't think about anything else. It will burn out your precious mocha pot. And it may also cause an explosion! Definitely not scaremongering!

There will be a layer of reddish brown foam on the top of the brewed coffee (this is coffee greasy foam) the finer the foam means the better the brewed coffee, otherwise the coffee is not too good or too fresh or the wrong shallow roasted beans!

Step 6: cleaning and cleaning of mocha pot

What should I do after I finish my coffee? Most people must know that the mocha pot must be cleaned in time after use because there will be a lot of coffee grease left in the pot, especially the sealed rubber gasket in the middle. If it is not cleaned in time, it will smell like oil dirt when it is used again in the future.

1. Turn on the upper and lower pot: the mocha kettle just used, because the kettle body is hot and hot, it is difficult to open, using brute force will wear the thread, first place cooling and then twist. If you want to cook again immediately, you can use cold water to cool the kettle body, so it is easier to open. Take the right-handed person as an example, the handle of the pot is facing right, the left hand is firmly fixed on the bottom of the pot, the mouth of the right hand is pressed upward against the root of the handle, the thumb is fastened to the lid, and the whole palm is pressed against the body of the pot. Rotate forward (that is, turn right).

two。 Pour out the coffee grounds in the powder trough, you can dig with chopsticks or gently hit the coffee grounds in the powder trough with meat in the palm to make the coffee grounds fall out. Do not hit with hard objects, so that it is easy to cause the deformation of the powder trough so that the upper and lower pots cannot be closed, and then rinse with water. Flushing should include every part of the whole kettle body. If you have the condition and patience, you can buy a brush to brush the baby bottle to clean the kettle. It is best not to use flavored detergent, as it will make the odor remain. After washing, dry it with a dry towel to keep your precious mocha pot new. Check whether the sealing ring of the kettle is aging after using it for a period of time, and replace it in time if it is aging.
