What is the variety of iron pickup?
Typica, the oldest native variety in Ethiopia, is native to Ethiopia and southeastern Sudan. According to years of research, all Arabica are currently derived from Tibica.

Qianjie Coffee has grown a small number of iron pickup coffee on the hilltop of 1300m above sea level in Lincang, Yunnan Province since 2013. The reason for choosing the iron pickup is that Qianjie thinks that the fine coffee should start with the varieties. One is that after more than a hundred years of adaptation, the tin card varieties that first entered the Yunnan region will make better adjustments to their own genes in order to adapt to the local climate. Therefore, Qianjie believes that if you want Yunnan coffee to have a clean taste, you should start with the varieties.
At present, the annual yield of iron cards grown in Qianjie coffee in Yunnan is about 600 kilograms, and the traditional sun treatment brings fuller taste and slightly fermented aroma to the coffee beans. Using the ratio of powder to water at 1:15, medium grinding and water temperature of 89 degrees, the coffee flavor showed plum, berry, fermented flavor, brown sugar flavor and black tea flavor.
What is the Katim breed?
Catimor in 1959, the Portuguese mixed Brazilian Kaddura with Tim to produce a disease-resistant Katim / Katimo.
Katim is not pure Arabica blood, it is a hybrid of Tim (a hybrid with Arabica and Robusta) and Kaddura (a variety of bourbon), so Katim has 25% Robusta pedigree. And its Robusta pedigree also determines its taste defects: the aroma is not rich enough, and the overall taste is bitter.
Some poor quality Katim is easy to appear astringent taste and more irritating mildew taste. However, Katim coffee is an important main force of commercial beans because it does not need shade tree cover, easy to grow, low maintenance cost and high yield. For a long time, Katim in Yunnan was the raw material of Nestl é instant coffee. But these are more based on the fact that these coffee beans were not scientifically planted and handled more properly at that time, and these coffee beans are usually planted in areas below 1000m.
