Coffee powder storage method Coffee beans after grinding storage time How to store coffee powder
Qianjie knows very well that coffee is a great knowledge. From the beginning of coffee planting to the last cup, there is a lot of attention to every step in it. Among them, even the seemingly simple storage of coffee, there are a lot of points for attention.
From time to time, the baristas of Qianjie Coffee will be asked by some buddies who have just entered the pit, "how long will the coffee beans last?" , "what is better to keep coffee beans?" , "should I keep the coffee beans in the refrigerator?" .
Hearing these questions, Qianjie Coffee felt both gratified and sad. The good news is that everyone is very positive about the taste period and the pursuit of the best taste. The sad thing is that someone wants to keep it in the fridge.
As we all know, the freshness of coffee beans will directly affect the flavor and taste of a cup of coffee, and whether it is properly preserved is an important factor affecting the freshness of coffee beans. The preservation of coffee beans is divided into two cases, one is the preservation of raw coffee beans, and the other is the preservation of coffee cooked beans.
In the preservation of raw coffee beans, we need to pay attention to the storage humidity and temperature to avoid mildew or worms. Coffee cooked beans need to pay attention to the problems of humidity, temperature, and oxidation, which will speed up the dissipation of the flavor of roasted coffee beans.
Three killers affecting the freshness of coffee and ripe beans
[sunshine & high temperature]
The heat of the sun will accelerate the volatilization of the aromatic substances in the coffee beans, that is, some of the aromas will go away, resulting in a loss of flavor. The bags of coffee beans sold on Qianjie Coffee are lined with aluminum foil. Although the greatest effect of aluminum foil can reflect light, it does not achieve the real sense of thermal insulation. So the place to save coffee beans needs to have light source and heat source as far as possible.
[humidity]
As we all know, humidity refers to the moisture in the air. If the original dry coffee beans are exposed to a humid environment for a long time, even if they are protected by sealed containers, it is difficult to escape the invasion of moisture when they are unsealed. Damp coffee beans are easy to deteriorate and produce mildew and other miscellaneous smells, which directly affect the performance of coffee flavor. So the place where the coffee beans are kept should be as dry as possible.
[oxygen]
Where there is life, there is oxygen, but here, Qianjie does not mean to stop the contact between coffee beans and oxygen, but to reduce the contact time between oxygen and coffee beans as much as possible. When we unseal and remove the coffee beans, the coffee beans still in the package or in the container should be sealed as soon as possible to slow down the oxidation rate of the coffee beans.
The storage time of coffee beans
The freshness mentioned in the previous part of this article refers to the best taste period of coffee beans, that is, the peak period of coffee beans' flavor. The taste period of coffee beans is within 30 days after the coffee beans are roasted.
Does that mean you can't drink after 30 days? This is not the case. The best taste period and shelf life are two concepts.
The best taste period is when the coffee tastes best after roasting, and the beans of Qianjie coffee are freshly roasted. The freshly baked coffee is not within the appreciation period, but also needs to go through a 7-day bean cultivation period of 5murmur. the flavor will be richer and fuller.
After the taste period, there will be no safety problems with the food, but the flavor and taste will be weakened with the passage of time. As long as it is still in the shelf life, if you put aside the flavor and aroma, you can still drink it.
Can you keep the coffee beans in the refrigerator?
Ta-ba! Don't keep the coffee beans in the refrigerator. When the coffee beans enter the refrigerated state and then take them out, due to the large difference between the refrigerated temperature and the indoor temperature, water vapor is produced on the surface of the coffee beans.
After grinding the coffee beans with water vapor, you will see that the coffee powder forms uneven caking. The caked coffee powder not only affects the uniform extraction when brewing coffee, but also the damp coffee powder will get stuck in the grinding knife head, if the knife plate is not cleaned and dried in time, this will always affect the flavor of the coffee beans that have been brewed after each grinding.
How long can the coffee beans be ground and powdered?
When buying coffee beans at Qianjie Coffee, some friends who do not have a coffee grinder at home will state in the remarks that they need to be ground. But how many friends know how long they can keep it?
First of all, we should know clearly that the reason why coffee beans are ground into powder is to increase the surface area of coffee particles in contact with water. Plus oxygen is ubiquitous, so from the moment the coffee beans are ground into powder, the freshness of the bag in your hand is in a race against time.
Some friends who like to come to Qianjie coffee shop to buy coffee beans will ask the baristas in our store to help them grind the coffee beans into the thickness of the kettle for soaking. When the baristas at the Qianjie coffee shop help these guests repackage their treasures, they use label paper to stick the air valves on the bags together to prevent the coffee powder from spreading so fast that the flavor is lost. In addition, the baristas of Qianjie Coffee will also advise friends that once the packaging is opened, it is best to consume a packet of coffee powder within a week, otherwise too much flavor will be lost.
How can I drink coffee beans after they are ground into powder?
This depends on the thickness of the grinding. In order to avoid the wrong taste of the finished product produced by a certain brewing method due to the different degree of grinding, Qianjie will determine the grinding degree of each bean, and in order to determine the grinding degree, the baristas in Qianjie will determine it through the Chinese standard No. 20 sieve.
When cooking with different utensils, the thickness of grinding is different. Take the most common hand-brewed coffee in Qianjie Coffee as an example, for lightly roasted and moderately roasted coffee beans, Qianjie generally uses a Chinese standard No. 20 screen with a screening rate of 80%.
[cooking suggestion]
The suggestion of brewing and cooking parameters is to use V60 filter cup, 90 ℃ water temperature, 15g powder quantity, 1:15 powder / water ratio and grindability according to the pass rate of Chinese standard No. 20 sieve.
[cooking technique]
Qianjie coffee is extracted by stages, steamed with 30 grams of water for 30 seconds, small water is injected around the circle to 125 grams, the water level is about to be exposed when the powder bed is about to be exposed, and the filter cup is removed when the water level is about to be exposed to the powder bed. (the time of steaming starts) the extraction time is 2 minutes 39 seconds.
It is worth noting that some people who drink filtered coffee for the first time usually drink instant coffee and think that coffee powder is soluble in water. So I grind the powder and soak it in water, and then I drink it. This is a mistake. More than 70% of the substances in coffee beans are insoluble in water and contain a lot of wood fiber. Therefore, if you want to drink freshly ground black coffee without dregs, filter it honestly with filter paper or mesh.
