After four to six weeks of sun exposure and humidity of 12 per cent or less, the beans are auctioned by the Ethiopian Commodity Exchange (ECX) by cup grading and quantity. Normally, the sun-treated beans are stored in the form of shelled beans and will not be shelled until export.

Yerga Sherphine itself is a small town with a population of about 20,000. The three neighboring small producing areas Wenago, Kochere and Gelena Abaya are also classified as Yerga Sherphine because the flavor of coffee produced is almost identical to Yerga Sherphine. Yerga Coffee is culturally and geographically similar to its neighbors, but Yerga Coffee seems to be blessed with exceptional conditions. Top quality Yerga Coffee has floral, bright citrus fruit, lemon notes and silky soft taste.

Introduction:

This bean comes from a single farm in Ethiopia and is processed by the Wenago cooperative.

Located in the south of Gedeb district, the cooperative was founded in 2005 and joined the famous Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) that year, which is known for producing high-quality sun-cured Yirgacheffe. The Waka Cooperative has about 300 coffee farmers under its umbrella. Founded in 2002, YCFCU also includes 26 other cooperatives serving more than 45000 coffee farmers.

The Vinago Cooperative is part of the Yirgacheffe Coffee Farmers Cooperative Union, founded in 2005 as one of 22 junior cooperatives. The Woka Cooperative is located in Gedeb, a remote area of Yegashifi in Gedeo district, 75 km from the local coffee distribution centre Dilla. The roads are in poor condition and there are 20 km of dirt roads from the Cooperative to the main paved road. The altitude is very high, around 1800-1900 meters. Since no chemical fertilizers or pesticides are used in the coffee cultivation process, the small farmers in Woka have also obtained the Skal organic coffee certification recognized by the European Union. Just as Kocher is famous for being washed, Walka is especially outstanding for being sunburned, but both Walka and Kocher have different treatments for raw beans. In recent years, the solarization method has become increasingly refined, greatly improving the traditional and extensive mode for hundreds of years, paying more attention to the care of ripe cherry harvesting and solarization process, so that the beans retain sweet flesh and slightly full of charm fermented wine flavor, making the flavor that washing method does not have.
