In the hot summer, coffee controllers are becoming more and more dissatisfied with hot coffee, whether it is packaged coffee drinks or home-made coffee, ice-cold coffee is gradually attracting people's attention. So how to distinguish between "iced coffee", "ice drop" and "cold bubble"?

Let's start with coffee. The interior of roasted coffee beans is "honeycomb structure", and the active ingredients of coffee are basically attached to the hollow inner wall of the honeycomb.

The coffee we drink goes through the coffee extraction process. That is, the water extracts the active ingredients through the honeycomb cavity.

The best effect of coffee extraction is to extract the delicious ingredients from the coffee, while blocking the bitter and astringent ingredients.

Temperature and time can change the taste of coffee by affecting the oxidation rate of coffee, that is, the rate of decomposition of oils, acids and sugars in coffee. The aroma, taste and texture of coffee vary greatly according to the speed at which this process occurs. This is why different extraction methods can produce different quality coffee.

Hot coffee Hot Coffee

Usually the coffee we drink is hot coffee extracted at high temperature.

The most common way to make coffee is to use 92 degrees hot water and inject it slowly and evenly into the coffee powder for more than two minutes. The hot water enters the gap of the coffee powder, and the flavor contained in it is extracted and dripped into the glass pot through the filter paper.

The high temperature extraction will make the tannic acid in the coffee decompose into pyrouric acid, resulting in a sense of bitterness and sour taste.

Iced coffee Iced Coffee

Iced coffee is iced coffee, which refers to the cold drink coffee which is quickly extracted with hot water, then added with ice or rapidly cooled, so it belongs to the hot extraction method. It takes about 2-3 minutes to make.

The most intuitive taste of iced coffee is noise reduction, thickening, convergence, sharper senses and easier to identify.

There are usually two ways to make iced coffee: external shrinkage and internal shrinkage.

The hot coffee that is about to be brewed is put into a coffee pot, cooled in cold water, and then refrigerated in the refrigerator.

The shrinking method is to add crushed ice to the glass, and then pour in the brewed hot coffee to cool quickly. However, ice will melt, so special attention should be paid to the ratio of water to powder when making.

Cold brewed coffee Cold Brew Coffee

Cold brewed coffee, also known as cold brewed coffee. It refers to soaking coffee powder in cold water less than 5 ℃ for a long time, waiting for fermentation, about 8-12 hours, and then filtering the coffee grounds.

This method can get the taste of ice brew without the help of professional appliances at home, and it is very simple and easy to operate.

The sweetness and smoothness of cold brewed coffee will increase and the acidity will decrease.

In this kind of low temperature extraction, when the water is in contact with the coffee powder for a long time at low temperature, only the flavor substances with smaller molecules, such as flower and fruit, are extracted, and the flavor substances with larger molecules, such as smoking and roasting flavor, are difficult to be extracted. therefore, cold-soaked coffee is more able to drink the flavor of coffee beans, smooth taste, hierarchical and sweet obvious.

Cold coffee, which is also a great base for drinks, can be prepared according to your preferences.

Ice drop coffee Ice Drip Coffee

Ice drop coffee, also known as Dutch coffee or Beijing coffee, is the use of ice natural water, ice water mixture or cold water drop by drop, different from cold coffee "water immersion coffee".

Due to the low temperature and single external force, the extraction time of ice drop coffee is bound to be lengthened, and the extraction process is about 4-6 hours.

The ice drop coffee can continue to ferment at low temperature, and the flavor is better.

Both cold-brewed coffee and ice-drop coffee are extracted with cold water. Compared with coffee extracted with hot water, they can retain the flavor and aroma of coffee to the greatest extent, while softening the acidity and bitterness. Because coffee brewed in cold water is not easy to oxidize, it can inhibit the appearance of sour taste (the acidic fat in coffee is not easy to be dissolved by cold water).

At the same time, the taste of iced coffee is more fragrant, delicate and subtle than cold soaking. Cold coffee is much more bitter than ice drop coffee, and its sweetness is greatly reduced.

In fact, iced coffee is still a high-temperature extraction, but with the help of ice, the very hot coffee liquid has been physically cooled at an extremely high speed.

If you want to make a taste comparison of three kinds of iced coffee, then iced coffee is better than cold coffee, and cold coffee is better than iced coffee.
