The Blue Mountains are located in the east of Jamaica, about 45 kilometers from the center of the capital Kingston, hence its name because the mountain is surrounded by the Caribbean Sea and the sun shines directly on the blue sea on clear days. The highest peak of the Blue Mountains is 2256 meters above sea level, which is the highest in the Caribbean. It has fertile volcanic soil, fresh air, no pollution, humid climate, foggy and rainy all the year round (the average precipitation is 1980 mm, the temperature is about 27 degrees). Such a climate has created the world-famous Jamaican Blue Mountain Coffee.
The "secret" of the pure taste of Blue Mountain coffee is that in Jamaica, coffee beans are grown in a mixed way, so we see a lot of coffee trees growing with banana trees and avocado trees. their coffee trees are on rugged hillsides, and the picking process is so difficult that unskilled female workers are simply unable to do it. It is very important to choose the right ripe coffee beans when picking. Immaturity or ripeness will affect the quality of the coffee. The picked coffee beans are shelled on the same day, and then let them ferment for 18 hours. After that, the coffee beans were cleaned and screened. The subsequent process is to dry, which must be carried out on the cement floor or on a thick blanket until the humidity of the coffee beans drops to 12% 14%. And then store it in a special warehouse. Take it out and roast when needed, then grind it into powder. These procedures must be strictly mastered, otherwise, the quality of coffee will be affected.
In 1948, the world-famous Jamaican Coffee Bureau (CIB) was formally established, and the Jamaican government enacted the regulations on the Management of Jamaica's Blue Mountain Coffee Industry. The main responsibility of CIB is to improve the quality of Blue Mountain Coffee through management and supervision and regain its global reputation. At this time, the definition of Blue Mountain Coffee has been strictly stipulated in the law: ① gives four legal coffee farms, including Wallenford, to process Blue Mountain coffee beans to ensure the quality of Blue Mountain Coffee. ② grows in the Blue Mountain area of 3000-5000 feet, and ③ Blue Mountain Coffee exports are graded: No.1,No.2,No.3, round beans. According to CIB standards, only coffee grown above 666m above sea level is called Jamaican Blue Mountain Coffee. The Jamaican government would rather sacrifice production in order to improve coffee quality. Jamaica is one of the countries with low coffee production in the world. Brazil, the world's largest coffee exporter, produces 30 million bags of coffee a year, while Blue Mountain produces only about 40, 000 bags a year. It is said that the same coffee tree species, whether planted in Hawaii, Kenya, Papua New Guinea or anywhere else with a similar climate, cannot produce the flavor of blue mountain coffee beans.
I took part in an unforgettable trip to the Blue Mountain Coffee Plantation in Kingston for one hour.
