When Chris Kris Schackman met Sophie Weigensamer, he was at a low point in his life. The financial crisis in 2008 brought him to Berlin from London to continue his original advertising film work, but instead, the new studio failed and he was about to change the runway.

Sophie, from Austria, is good at making cakes and desserts and has some friends and clients in Berlin. Born in Massachusetts, Kris has lived in New York for a long time and has been fond of coffee since college. When they went to New York, they saw some self-bakeries and thought it was cool. at that time, they could not see such a small bakery in Germany, so they decided to open a dessert shop and put a coffee roaster in the store. when residents of the nearby community come for afternoon tea, they can read the newspaper and coffee with cake.

When they opened a store in Berlin in 2010, they chose a small storefront in the relatively cheap Kreuzberg neighborhood where two guests could sit, and the two bought a Diedrich IR-5 bean dryer from the United States and put it in the store. Before opening the coffee shop, the only professional training Kris received was the three-day comprehensive course given to him by Diedrich's boss: baking, machine maintenance and quality control. he learned cup testing for the first time and heard the word "native place of origin" for the first time. In the first year of opening the store, Kris basically practiced baking. In the first six months, he only bought Indonesian beans. Except for Indonesian beans, he only dared to buy certified beans, tropical rain forest, fair trade, organic UTZ, and so on. Sohpie's dessert is more famous than Kris's coffee.

When they first opened a shop in Berlin, some people would paint "yuppie go back!" on the walls of the cafe and regard them as representatives of capitalism. in fact, they are self-baking shops that are too small to survive on labor. Named Five Elephant, a saying from Idaho in the United States, it is said that an elephant flew into the sky, led a man to fly all over five continents, let this person taste coffee from all over the place, a very strange story.

Five Elephant baked beans finally became famous. Kris found that he preferred Scandinavian baking and began to import raw beans from Nordic Approach, and the whole batch of Ethiopia commissioned them to import them. In 2012, they had a chance to meet Croces, the owner of Brazil's Ecological Manor (FAF). After numerous Skype calls, Chivalrous Man decided to sell his Starbucks stock for 14 bags of Brazilian raw beans. He gradually found that the coffee bought directly from the place of origin is far better than the coffee from traders. The self-baking shop originally designed for two guests was not enough. First, the back wall was knocked down, the use area was expanded, and finally the bakery was moved to a larger space nearby.

Five Elephant, which entered its seventh year this year, is already the premier bean baking factory in Berlin, and the bean baking machine has been expanded to Diedrich 25kg. The second store opened at the end of last year, and there is still not much space in Mitte, the most fashionable shopping district in Berlin, but there are two beautiful marble bars, the most technologically advanced Modbar Italian machine, and the Nordic design is so simple that even their bean bag packaging has won Sprudge's best design in the world.

In addition to baking more refined, Five Elephant visits farms in El Salvador and Brazil every year, and one year even sends bartenders to stay on Brazilian farms for six months to find out the flavor they want. Five Elephant won third place in the Nordic Baking Bean Competition in 2015, far surpassing all its non-Nordic teams.

The cup of coffee with cheesecake appeared in first-class cafes in the world, more people fell in love with the beans of this flying elephant, Sophie Weigensamer became Sophie knight-man, Five Elephant is no longer just a small self-bakery in Berlin, the dream of being born from a piece of cake can become big, can't it?
