In the actual baking work, it is sometimes very difficult to describe the flavor of coffee. Our roaster tests a beautiful washed Ethiopian Kelloo coffee. All people describe the sweetness and acidity of this coffee as citrus / pear, but we can't be sure of the floral aroma of Kello. The scent of roses is our evaluation, but people are not satisfied with it.

Since there is no more detailed description, it can only be so. A few weeks later, during my vacation in Tipperary Apple Orchard, I reconsidered how to describe the rose aroma of coffee in detail.

The apple orchard is delicate and quiet, the retail stores in the apple orchard sell boxes of apples, and the air in the store is full of pleasant aroma. The aroma reminds me of our Kelloo coffee. The aroma in the air in the store includes the sweetness of ripe apples and the smell of roses. I remember that James Hoffmann also said that it was very difficult to describe the aroma of apples.

Not all roses smell like roses.

That afternoon we visited the nearby Swiss Cottage. The place is surrounded by all kinds of roses. A rose called Albertine, planted on the porch, smells like the smell of apples this morning.

I also think of the "rose fragrance" evaluation given by everyone when tasting Kelloo coffee before, in fact, the smell of roses is not exactly the same. After this holiday, I began to consciously record and describe the fragrance of different roses.

The scent of roses

Rose water or traditional perfume can represent the general perception of the scent of roses, but different roses have different aromas and subtle differences.

There is an apple scent in roses, such as the Albertine rose we talked about earlier. Yellow roses often have aromas of citrus (citrus), lemon and Harry Edland (blue rose) with the smell of grapefruit.

Some roses have peach aromas such as Red Devil Rose (Red Devil) and Honore de balzac (Balzac Rose). This peach aroma also has cucumber and mint aromas. Lady Isapelle Rose has a strong smell of menthol eucalyptus, while Alexander Rose has a faint scent of candles. Radox Bouquet roses smell like fresh bath shampoo.

The relationship between describing the flavor of coffee

We note the problems in the "Le Nez du Cafe" scent bottle, which is widely used in the coffee industry. The manual points out that the aroma of No. 11 scent bottle comes from "Damascus Rose" (Damask rose), but the official name of No. 11 scent bottle is "Tea Rose/Redcurrant Jelly". Damascus, which originated in China, is widely used to make rose water (rosewater) / rose oil (rose oil). Its aroma has the characteristics of tea leaves, clove and honeysuckle. While Tea rose is a completely different kind of rose, how red currant jelly (redcurrent jelly) is integrated into the description of rose aroma is also open to question.

Different roses have different aroma, which can not be simply described as "rose fragrance". Specific varieties of roses should be pointed out to avoid confusion. In view of this, it is better to describe the aroma of coffee more accurately.
