A breakthrough in coffee brewing: coffee made from a French coffee maker contains more caffeine, coffee bean alcohol, and oil associated with high cholesterol. But not all of these chemicals are bad. They help prevent hepatitis.
"from the beginning, the French paid more attention to making coffee than anyone else," William Harrison Ukers wrote in "everything about Coffee" in 1922. He said that the first French coffee maker appeared around 1800, and forty years later, the first glass coffee maker appeared.
Although Ukers's encyclopedic work describes dozens of appliances, there is no mention of the pump-shaped device, what we now call a "French filter press" (French press).
The coffee maker, known as the "cafe è re" in British English, did not become popular until after Ukers's death, but the technology was available long before he wrote the book. In March 1852, a French metalworking mechanic and a businessman jointly obtained a patent for "filtering coffee through pistons". The patent uses a live rod connected to a piece of tin foil with a mesh sandwiched between two layers of flannel and pressed by hand into a cylindrical container. The inventor said: "press the piston down, and the filtered coffee will come up, very clear."
But the French filter press was not known until the 1920s, when a Milan factory applied for a patent for a version of the French invention. The company has since improved the equipment. One model introduced in 1935 has a spring wrapped around the pump disc so that it can be pressed horizontally into the cylindrical container.
In the 1950s, similar designs began to spread in Europe. But it took a while for the gadget to come to the United States, and it took a long time for the gadget to gain its current name (until now, the first explanation under "French press" in the Oxford English Dictionary is still "exercise and biceps exercise").
By the early 1980s, some Americans modelled on the British saying that they called it "cafe è re"; some people called it "French pressure filter coffee maker". In 1993, Florence Fabricant explained to readers of the New York Times that "French filter pressing" was a favorite of experts. But she says there is a major drawback to this approach: "coffee can be a little cloudy sometimes."
