Background:

Hand brewed coffee technique requirements are not high, the process is simple, elegant, but can extract the most complete flavor of coffee, very suitable for coffee beginners. The tools required include a hand brew pot, a filter cup, filter paper, and a container for coffee filtrate. The taste of coffee brewed by hand is similar to that of drip coffee machine, and the level is more detailed and rich.

Step 1

Boil twice the amount of water needed for coffee (about 600-700 ml).

Step 2

Weigh 25-30 grams of coffee beans (about 2-3 tablespoons).

Step 3

Grind the beans while the water is heated. The ideal coffee powder particle size is close to sea salt.

Fold the filter paper and put it into the filter cup.

Pour in half the hot water to moisten the filter paper and preheat the filter cup and the coffee pot underneath. Let it sit for 1 minute, then drain the water from the coffee pot and get ready to make coffee.

Pour the coffee powder onto the filter paper and gently shake the filter cup to evenly distribute the coffee powder. The smoother the surface of the coffee powder, the more even the extraction.

Starting at the center of the coffee powder, slowly pour twice the weight of the coffee powder into the water evenly (e.g. 50 grams of coffee powder requires 100 grams of water). Keep the side filter paper upright as much as possible during filling.

At this point, the coffee powder will begin to bubble and expand, the process takes about 30-45 seconds. Complete expansion allows water to thoroughly infiltrate the coffee powder and extract better flavor.

After expansion, continue to inject water steadily and evenly toward the center of the coffee powder. The water injection process should last for 2 and a half minutes and 3 minutes, and the rate should be kept consistent as much as possible. The total volume of water injected is approximately 300-350 ml.
