Background knowledge:

Around 1840, a French housewife and a Scottish marine engineer simultaneously invented siphon coffee (Siphon). The siphon coffee maker consists of a cylindrical upper pot, a bulb-shaped lower pot, and a filter cloth with a metal hook. Siphon coffee has been improved many times for more than a hundred years, but its tea-like sweet flavor, precise brewing process and simple utensils are invariable features.

Step 1

Soak the filter cloth in warm water for 5 minutes, put it into the bottom of the siphon pot, fix the hook under the filter cloth at the end of the glass tube, and adjust the filter to the center position.

Step 2

Pour 300 grams of hot water into the pot.

Step 3

Put the upper pot together with the filter cloth on the lower pot and make sure it is placed evenly, without special downward pressure. Then put the whole set of siphon pots on the heat source.

Step 4

While the water is heated, weigh 20-25 grams of coffee and grind it to a finer particle size than drip coffee.

Step 5

After the water in the lower pot is boiled, it will begin to go up into the upper pot. In the end, there will still be some water left in the pot, which is a normal phenomenon, do not worry.

Step 6

When most of the water enters the pot, lower the intensity of the heat source so that the water temperature is about 85-90 degrees Celsius.

Step 7

Pour the coffee powder into the pot and gently press the coffee powder with a wooden stirring spoon or cream knife to soak it completely.

Step 8

Let the device continue to rest on the heat source for 1 minute and 10 seconds.

Step 9

Quickly remove the heat source and stir 10 times with a wooden mixing rod.

Step 10

The coffee liquid will begin to move to the next pot, which will take about 1 minute. When the filter cloth bulges up and is covered with coffee grounds, the coffee is brewed. At this time, the coffee filtrate of the pot will also slowly bubble.

Remove the pot, let it cool for a few minutes, and you can enjoy the coffee.
