Background:

In 1941, German inventor Peter Schlumbohm designed the Chemex hand-washing kettle, and its delicate design remains unchanged today-the glass funnel in the upper half and the conical flask in the lower half are connected by a detachable wooden handle and tied by a delicate leather rope. This unique design has been hailed as "the perfect combination of rationality and madness" and has become a collection of museums such as the Museum of Modern Art in New York.

Chemex handbrewers have long been a must-have for coffee connoisseurs, brewing coffee that tastes close to drip coffee, but requires more skill. The coffee powder must be slightly coarser in particle size than drip coffee, and the rate of water injection must be appropriate. The advantage is that it can brew coffee for more people, so that friends and relatives can enjoy it together.

Step 1

Boil twice the amount of water needed to actually brew coffee. For example, a 6-cup Chemex hand rinse requires approximately 1,200 - 1,400 grams of water.

Step 2

Weigh 50-60 grams of coffee beans (about 4-5 tablespoons).

Grind beans while boiling, about the size of French coffee powder.

Step 4

Spread the filter paper and place it on top of the Chemex hand rinse pot. The half of the three layers of filter paper should face the direction of water injection; the filter paper should be completely opened to avoid blocking the water column.

Step 5

Pour a little hot water to wet the filter paper in the center and preheat the hand rinse pot. After 1 minute, the same water can be poured into the coffee cup to preheat it.

Step 6

Pour the coffee powder onto the filter paper and gently shake the hand brew to evenly distribute the coffee powder. The smoother the surface of the coffee powder, the better the brewing.

Step 7

Starting at the center of the coffee powder, slowly pour twice the weight of the coffee powder into the water evenly (e.g. 50 grams of coffee powder requires 100 grams of water). Keep the side filter paper upright as much as possible during filling.

After filling, the coffee powder will start to bubble and expand, which takes 30-45 seconds. Complete expansion allows water to thoroughly infiltrate the coffee powder and extract better flavor.

After expansion stops, continue to pour water evenly toward the center of the coffee grounds. The injection process should last for 4 minutes, and the rate should be consistent during the period.
