Kopi Luwak Nouak Coffee
For coffee lovers, drinking a real cup of Jamaican Blue Mountain Coffee can be said to be a high-end enjoyment. But in fact, the Blue Mountain of Jamaica is not the most expensive coffee. The most expensive coffee is Kopi Luwak Nuwak coffee produced in Indonesia (also known as civet coffee. Kopi means "coffee" in Indonesian and Luwak means Indonesian musk cat). It once became a tribute to the Dutch royal family more than a hundred years ago when the Dutch ruled Indonesia. (please refer to the previous blog post Coffee, Indonesia, Dutch)
Speaking of this royal tribute, there is also an inelegant nickname, Kopi Luwak, because the coffee is produced by the poop of an arboreal wild animal called "civet" on the Indonesian island of Sumatra. Local farmers usually regard the discovery of civet poop as a gift from heaven, because not all civet droppings can be luckily found. Once several such "coffee beans" are found, the locals will bend over and pick them up, collect them carefully, and then go through several processes such as selection, drying, deodorization, processing and roasting to produce the rarest, most unique and most expensive coffee in the world.
It is said that although the coffee comes from smelly poop, it is only full of sweetness and a burst of indescribable sweetness. This wild musk cat likes to eat fat, multi-paddled coffee fruits, but the hard hard nuts (raw beans) cannot be digested and are excreted with feces. After being cleaned, they become Kopi Luwak coffee raw beans! Due to the coffee beans naturally fermented by musk cat intestines and stomach, the coffee made by ordinary washing method has a different flavor and is particularly thick and mellow.
The whole process of making coffee is as follows:
1. Civet cats like to eat red coffee fruits that are ripe on coffee trees.
two。 Pick out undigested coffee seeds from cat droppings
3. Remove the silver film of coffee seeds, wash them with water and dry them in the sun.
4. Nouak coffee beans are made by stir-frying.
Only about 150 grams of coffee beans can be extracted from a jin of civets' feces, which can cause 20% loss in the roasting process. Due to the unique raw materials and processing technology, this kind of coffee can be said to be very rare. No more than 400 kilograms of coffee beans are supplied worldwide each year. A 4-ounce cup of Nuwak coffee costs $168 (1400 yuan), which is many times more expensive than Blue Mountain Coffee, and each cup of Kopi Luwak has a special certificate to show its worth.
What's the flavor of this coffee? Generally speaking, Indonesian coffee has the taste of earthy and traditional Chinese medicine, and its consistency is the highest in all continents, but Kopi Luwak has a stronger earthy taste and consistency, which is almost close to that of syrup and has a very special flavor. After drinking, there will still be a touch of peppermint cool feeling in the mouth, which is the "exclusive taste" that ordinary coffee does not have. After drinking a cup, take a deep breath or take a sip of cold water, you can obviously feel cool from mouth to throat. It's like I just ate a mint lotion.
As the natural "civets" poop is too difficult to collect, local villagers not only collect wild civets feces, but also begin to cage civets, and put large pots of picked coffee cherries in front of civets. Hungry civets have no choice but to eat all the coffee cherries. The taste of the Nuwak coffee produced in this way is greatly reduced.
Does the taste of Kopi Luwak Nouak coffee really have anything to do with civet? The answer given by scientists is yes. According to Canadian researchers, the civets' digestive juices break down the protein in coffee beans into very small particles, which enhances the aroma of coffee during grinding. In addition, the civets' intestines can filter out certain proteins, thereby reducing the bitterness of the coffee. The researchers say that the process of Kopi Luwak coffee beans passing through the intestines and stomach of civets is very similar to the wet processing of coffee during fermentation, in which lactic acid bacteria play a key role.
All in all, this musk cat coffee can be regarded as the best coffee in terms of price. The asking price of RMB 1400 yuan for a cup is always a veritable luxury. You can say that it is a gimmick, or you can say that things are scarce. As the saying goes, "there is a man chasing stench on the sea", isn't it?

In fact, I have already introduced the Red Cherry Project once before (Sunlight Sidamo Red Cherry Project). At that time, the bean response was very good. Many friends tried it and then turned around and wanted to do it again. However, even I didn't have much left at that time. Later, I kept looking for the beans of the Red Cherry Project, but they all failed. Maybe this is also the helplessness of many domestic coffee lovers. Because we
