Today, I would like to share with you that among the various controllable and uncontrollable cooking parameters, the most easily controlled and ignored parameter is the water temperature.

Water temperature is very important, because different water temperatures will extract coffee with different characteristics and flavors.

There are usually three types of water temperature when extracting coffee:

1. Use water below room temperature

2. Use hot water

3. Coffee is brewed with water.

Coffee extracted with water below room temperature usually takes as little as 2 hours to more than 24 hours in order to fully extract the coffee ingredients. The coffee extracted in this way is a bit like wine, which can be preserved for a relatively long time. The longer the time is, the softer the taste will be, but it will go bad if you put it for too long. The "cold bubble method (Cold Brew)", known as ice drop coffee, belongs to this method.

Coffee extracted with hot water is the most common way. The general water temperature is between 80 and 95 degrees Celsius. The lower the temperature is, the stronger the sour taste is, and the bitter taste also appears. The taste of coffee extracted by different water temperature varies greatly, so even if you use the same coffee beans and the same grinding degree, different water temperature will bring different feelings. Therefore, people who like to use hand drip filter pot or French filter pressure pot for a long time have their own preferred water temperature.

Coffee is brewed with water by extracting coffee at a temperature close to 100 degrees Celsius, as is the case with Turkish coffee pots. Relatively speaking, you can drink stronger coffee, and the water temperature is always fixed at 100 degrees Celsius, it is easier to maintain the consistent flavor of coffee.

Adjust the water temperature can control the taste of coffee, too bitter, the water temperature is lower; too sour, the water temperature is higher. Remember, as long as you know how to adjust the water temperature, you can change countless different flavors of coffee.
