Fazanda Alta Vista of Gaojing Manor, Camominas, Brazil

Super producing area-South Minas ★

With the establishment of the Brazilian Fine Coffee Association (BSCA), it has changed the difference between the five major provinces in the past. in order to distinguish each geographical environment and microclimatic conditions into coffee beans with their own characteristics, the Brazilian Fine Coffee Association began to make more refined classification and nomenclature, and the labeling of micro-producing areas enabled coffee beans to be traced back to more detailed and accurate production resumes.

Three of the most popular areas for boutique coffee makers are Sul de Minas- Minas South (Minas Province), Mogiana- Morgiana (S ã o Paulo Province), and Chipada Diamantina Diamond Highlands (Bahia Province).

These three producing areas almost guarantee the award batches of COE every year!

Gao King Manor is only 16 years old and can only be regarded as a small and medium-sized estate in Brazil. Robson Vilela, the owner of the estate, offers extremely generous salaries for 13 regular employees and has maintained a record of "zero employee turnover" since 2007.

Fazenda Alta Vista is located in the town of Cristina in the Carmo region of southern Brazil, where Robson Vilela bought 84 hectares of land in 2001 to start his coffee business.

In general, when the coffee fruit is ripe, the skin changes from green to red, but Yellow Bourbon stays in the bright yellow appearance, so it is named after it! First discovered in Brazil, Huang Bourbon has become the winner of COE competitions and is the representative variety of Brazilian boutique coffee with typical flavors of nut, cocoa and citrus flavors.

Starting from 2016, the Carmo region began to try honey treatment (Honey), which only removes the peel and retains pectin for direct sun exposure, which can not only reduce water consumption, but also bring out more fruit flavor and sweetness!

A lot of bananas are cross-planted in the manor, which can also be used as coffee shade in addition to economic benefits. Due to the drought in Brazil in 2014, these banana trees played a protective role and ensured the quality and yield of coffee in the coming year.

Camominas Cooperative began to carry out the "innovative Flavor treatment" project with several national coffee farmers in 2014, respectively in Costa Rica, Nicaragua and Bolivia. The Osher team participated in the parts of Brazil and Nicaragua. Before last year's (2015) Excellence Cup, we had intensive cup testing of works at three different times and patterns. After the competition was announced, including the runner-up, all came from this project. The innovative flavor method uses low temperature whole fruit impregnation, and then low density drying for a long time. When used in different producing areas and treatment methods, it will be adjusted on the basis of high quality flavor. Sometimes a small step must be tested repeatedly to determine the subsequent action and study the impact on quality and flavor.

This batch of Gao King Manor Huang Bourbon and the previously delivered Pereira Sister Manor are all from the innovation project. The farm will make the first screening, and after the fruit is transported back to the manor directly under the processing plant, it will be placed directly in the cold spring water for 15 hours. Let her do the slow development of the first stage after harvest. In the morning of 15 hours, the coffee fruit will be removed, placed directly in the African scaffolding, and the thin layer will be low-density air-dried. This process takes 14 days. After 14 days, check the dryness of the fruit and store it in the warehouse. To this batch of Gaojing Manor this batch of yellow bourbon, the front section has a unique apple flavor, the middle and back section of very sweet hazelnut chocolate with maple syrup sweet, quite unique and delicious!
