Gold Mandning
Ding Shang Gold Mantenin is produced in Lintong (Lindong) area in northern Sumatra, Indonesia. The harvesting operation is limited to picking the ripe fruit by hand to ensure the preliminary bean quality. Coffee cherries are processed by SEMI-WASHED semi-washing method, natural sun drying, shelling treatment, and then another drying and refining process, two times of green bean cleaning and four times of Hand-Pick manual selection process. So Gold Top Mandheling is a strictly selected top-quality Mandheling coffee.
Gold Top Mandheling selection procedure:
·Specialized coffee buying companies buy the perfect red coffee fruit directly from farmers.
·Remove the pulp from the coffee on the same day. Remove the green beans and wash them in a small sink to remove impurities completely.
·The washed beans are sun-dried and shipped to an export company in Medan, which then sun-dries and husks the beans for two days.
Since the moisture content of the treated beans is still as high as 40%, it must be reduced to 12.5% by sun treatment.
·Fully dried beans must be treated by specific gravity, air volume and sieve selection, remove Silver Skin, adzuki beans, defective beans, foreign matter, etc., and finally
Hand-Pick treatment to achieve the highest quality of raw beans before they can be labeled Gold Top Mandheling export.
· Gold Top Mandheling is packaged in 10kg bags for global buyers.
Cupping Recora -Dry aroma exudes the unique grassy and woody aroma of Rainforest Coffee, slightly wafting the sweet aroma of dried longan fruit. After brewing, the unique smell of Rainforest fir becomes more obvious. It is bitter and sweet like chocolate. The latter part turns to honey and sweet. The taste is mellow and full, but the fruit is low and sour, with a slight sweet aftertaste.
Featured Talk: Gold mantinin is an old Typica species grown around Toba Lake in Lindong and must be selected and have that unique aroma. This level is different from the machine harvesting of gold mantinin. It is completely hand-harvested and then completely classified as the best mantinin coffee. And export by the local government for certification action Lin Dong region is located in the north of Sumatra and stipulates that the coffee beans in the estate must be manually harvested and must be manually processed by SEMI-WASHED (semi-washed) way after shelling and drying, and then through the manual selection process "second cleaning + four manual selection" can be regarded as gold Mantinin!! In Taiwan, when it comes to coffee, everyone will think of Mantelin mainly because of the rich taste and taste of Mantelin. However, it is worth noting that Mantelin sold in Taiwan is actually classified into many categories. For Mantelin on the Golden Tripod, it has a difference between PWN and BIWA. As far as my experience is concerned, BIWA's taste clarity and balance are better than PWN, so it is more stable in roasting degree.

The difference between mantinin gold and mantinin gold tripod
Dingshang Gold Mandrine Gold Top Mandheling was formerly Gold Mandheling.(Golden Mandheling), Golden Mandheling was originally a Japanese product and was introduced to Taiwan about ten years ago. At that time, the name was called Golden Mandheling, and we translated it as "Golden Mandheling". However, a local Indonesian company registered Golden Mandheling as its trademark a few years ago. As a result, all companies introducing this product in Japan had to remove the name of Golden Mandheling from use, so Japanese importers changed Golden Mandheling to Gold Top Mandheling, so they also changed its translation name to-Dingshang Gold Mandheling.
Indonesia is a major coffee-producing country and is made up of a number of islands, mainly Sumatra, Java, Surawesi, New Guinea (some regions have become independent) and the tourist resort of Bali. Among them, the most well-known are gold mantinin and civet coffee beans.
Chinese people are familiar with the golden mantinin usually semi-washed treatment, after a few days of sun treatment, then washed to remove the pulp, so that the sweet taste of the pulp into the coffee beans, combined with the clean taste of washed beans and the unique flavor of sun beans.
The Golden Mann marked "PWN" is the abbreviation of Indonesian Pawani Company. The Golden Manning coffee produced by the company has been registered in Indonesia; therefore, the coffee beans produced by Japanese companies in the same area can only be sold as "Golden Manning", and the packaging is marked "BIWA"...
In Taiwan, you can still see a lot of gold mantelin on sale, that's because Taiwan's Chinese and English are not registered. As a result, Mantenin in Lindong began to be subdivided, and in recent years, some Mantenin named after regions began to appear on the market (e.g. Sidikalang for SDK Mantenin). The meaning of Lintong gradually narrowed to the production area near Lintonnihuta.
Whether it was Golden Mattanine or Golden Tripod Mattanine, they were all hand-harvested, processed with exquisite agricultural techniques, and hand-selected to remove defective high-quality coffee beans. Besides the original rich aroma of Golden Mattanine, they added a delicate and rich taste. The flavor itself is quite rich, and then the use of baking process, round, mellow, thick taste retained, and then added to the special coconut milk aroma and delicate layers of flavor, absolutely you have never tasted fine coffee beans.
As for personal subjective feeling, I think that the taste of "PWN" gold mantelin is more bitter, fragrant, thick and mellow than "gold tripod mantelin". As for which is better or worse, I can only say that-vegetables and turnips have their own advantages!
