The brothers and sisters in Menezes are now in their fourth generation, managing and operating their "Santa Felissa" headquarters farm. Healthy cherries from this plantation are slowly ripened by 70% in the shade; then cherries at 22 Brixes can have a high proportion of sugar to convert them to acid, some of them lactic acid, by raising African double beds for 35 days, slow dry-on.
