How to fold chemex filter paper and how to use chemex filter cup
Chemex is from the United States
If you have seen the chemex entity or photos, you must think it is very similar to the measuring cup in the laboratory.
And it's true that chemex was invented by a man in the lab.
Chemex is the best hand brew I've ever used, and it's the only good thing that has been included in gallery's collection.
Not only is the appearance beautiful, but the filter paper is really different.
Keep a lot of the flavor of the coffee.
Now let's introduce how to cook chemex.
Prepare utensils:
One pot for each person.
2 hands to punch a thin-mouthed pot
3 coffee beans 22 grams
4 unboiled water
5 special filter paper
6 timer
Steps:
1 boil unboiled water
2 the coffee beans are ground, the thickness is generally medium, and the Pegasus bean grinder on the market is about 5.
3 fold the filter paper according to the outer packing instructions and put it into the CHEMEX hand punch pot
4 boil the unboiled water and pour it into the thin nozzle to make the pot
5 lift the thin nozzle to make the kettle, rinse into the CHEMEX hand flushing pot with 40CC or so hot water, clean the filter paper, and then pour out the water
6 pour the ground coffee powder into the CHEMEX hand pot and shake the powder slightly to smooth it.
7 when the water temperature reaches the desired temperature (note), first inject water until the coffee powder is covered (about 50CC), and slowly inject water from the outer ring to the inside.
8 steaming at this time, you can observe that the bean powder is "breathing" and bubbles are formed (if your beans are fresh, you will see these)
After 9-30 seconds, inject hot water and start to draw a circle in the center of the cup until the cup is green.
10 wait for 30 seconds and inject water again in step 9
After a second, pour the remaining hot water into it.
12 when the time is 2:30 or 2: 40, remove the filter paper
13 you can enjoy a delicious cup of coffee at this time
Note:
The expected temperature depends on the baking degree of the beans. if it is medium-shallow or medium-baked, the water temperature can be boiled at 95 degrees. If it is medium or deep baking, it is better to use 85 degrees.
How can it be measured without a thermometer?
After the hot water is boiled and poured into the thin nozzle boiling pot, the water temperature will drop to 95 degrees, and it can be boiled after the filter paper / screen cleaning.
If you want 85 degrees, it will usually drop to that temperature after waiting for about 3-4 minutes.
