The Piccolo latte that is popular all over Sydney, Australia. Australian piccolo latte
Now when we walk into the coffee shop, we can see all kinds of drinks, just the combination of milk and coffee: latte, cappuccino, Australia white, dirty, piccolo. I believe you are already familiar with the first four types of piccolo, so what on earth is this piccolo that sounds "unpopular"?
Piccolo coffee is also called "little latte".
Australians are deeply influenced by Italian coffee culture, baristas combine local tastes and create a variety of unparalleled coffee drinks based on traditional espresso, such as Starbucks'"hot" Flat White. Unlike the Flat White, Piccolo is smaller and smaller, with only half a latte in size, so you can finish it in two or three bites.
Piccolo latte translated from piccolo latte, piccolo refers to piccolo in English and small in Italian. Piccolo appears because coffee bean roasters and baristas taste coffee by drinking Italian concentrate and mixing milk alone when debugging. Because the regular latte has a large cup, it will basically be poured out after two mouthfuls, and the barista doesn't want to waste it, so he reduces the proportion of milk. Gradually evolved into a mini version of the latte, which is a good choice for people who do not want to eat too much caffeine and feel significantly full.
What's so special about making Australian piccolo coffee?
There is some debate among baristas about the formula for making piccolo, with some arguing that piccolo is made of espresso and a small amount of whipped milk, while others insist that it should be made of espresso Ristretto and a small amount of whipped foam. Nowadays, there is no fixed production proportion in the industry, so piccolo coffee is based on the flavor and tonality of coffee beans and the barista's understanding of piccolo coffee.
The flavor of the coffee comes from the coffee beans used. The espresso produced in Qianjie store is concentrated by using the "sunflower warm sun blend coffee beans" baked in Qianjie. It is composed of 70% Honduran sherry coffee and 30% Yejia sherry sun-tanned cherry coffee. Shirley's whisky, vanilla and cream flavors are paired with the tropical fruits and fermentation of red cherries, making the coffee in the cup taste rich and soft.
Qianjie piccolo will use a small cup of about 90~100ml, the ratio of coffee to milk is 1:5, preheated in advance to ensure the taste of the coffee as far as possible. A single copy of Ristretto will be used as the substrate. Espresso Ristretto, which means "limited" in Italian, is also called espresso. It usually takes only the front and middle part of Espresso, so it has a stronger taste and a more concentrated flavor. Qianjie will use 20 grams of coffee powder, extract 28 grams of coffee liquid, take 20 to 25 seconds, a single serving of Ristretto is 14 grams, first pour into the cup.
Milk is more particular about the part, you know, the less milk is difficult to deal with. Choose a 350ml milk tank in front of the street and pour in 100ml milk. Piccolo latte does not need to be as flat as the mouth of a cup, so it retains a milk foam layer similar to that of a latte, with a thickness of about 0.3~0.5cm, and the milk temperature is controlled between 55 ℃ and 60 ℃ to ensure that it will not burn the mouth. Blend evenly with Ristretto as much as possible, start to draw flowers out of seven points, and the newly made piccolo tastes best for direct drinking.
How would you like your piccolo?
The piccolo coffee made in front street shows the aromas of vanilla, cream, chocolate milk, whisky heart chocolate, as well as the sour and sweet berries, full coffee flavor, milk flavor and lingering finish.
As mentioned in the front street, the cup of piccolo coffee is very small, mainly to highlight the flavor characteristics of coffee beans, suitable for a slow aftertaste of coffee. When tasting in Qianjie, I will first smell the faint aroma of espresso liquid under the support of milk, drink the first sip, let the coffee liquid fill the mouth, and feel the texture of the milk foam and the consistency of the coffee. After drinking, feel the remaining rhyme in the mouth, finally take a sip of water, Huigan slowly become clear.

How to fold chemex filter paper and how to use chemex filter cup
Chemex is from the United States. If you have seen the chemex entity or the photo, you must think it looks a lot like a measuring cup in the laboratory, but it's true that chemex was invented by someone in the lab. Chemex is the best hand brew I've ever used, and it's the only good thing that has been included in the gallery collection. Not only does it look beautiful, but the filter paper is really different. It preserves a lot of the taste of coffee right now.
