Columbia Garden Farm El Jardin is located in Huila Orchid Valley Orchid Valley, Vera producing area, with an elevation of 1750 meters. It is one of the three coffee estates of Pedro Chusilo Pedro Trujillo. These three adjacent estates are located in the central and western mountains south of Huila in Vera province. The rainfall in this area is abundant, the temperature difference between day and night is more than 20 degrees C, the lowest temperature is about 5 degrees C in winter and the highest temperature is more than 30 degrees C in summer. Low temperature and great temperature difference between day and night make coffee cherries ripen slowly. Coffee beans have higher hardness and sweeter taste
The coffee varieties grown on the farm are Kaddura Caturra and Columbia Colombia. Organic fertilizers are applied three times a year to keep the soil healthy. Shade trees are also planted in the park to protect coffee trees from sunburn, pesticides and fertilizers, and to maintain the sustainable management of coffee in an environmentally friendly manner! Because of its proximity to the equator, there are two harvests a year, the main production season is from October to January, and the secondary season is from April to July; it is basic to pick ripe coffee and cherries by hand, and remove immature or overripe defects before peeling, according to the temperature and humidity at the time of harvest, to decide to use cold water to wash fermentation or anhydrous dry fermentation, and to manually remove defective beans during drying.
The dry aromas of this batch are honey cream sweet, cashew nut aroma, some micro-herbaceous fresh, wet citrus fruit sour bright, brown sugar sweet and full, also with a little pineapple sour aroma, refreshing taste, bright sour fruit, plum, red currant, citrus, lime, some Xu pineapple, some milk sweet aftertaste, sugar sweet and lasting. The dry aromas of cocoa, roasted almonds and caramel are cocoa, roasted almonds and caramel. the wet aroma is chocolate caramel, bitter and sweet with creamy aroma. the taste is thick, caramel sweet and persistent, with a fresh finish and a touch of spices. Throat fragrance lasts for a long time!
