Santa Rita Farm (Finca Santa Rita) is named in honor of the Italian nun Santa Rita. The farm belongs to the JASAL Group of El Salvador. JASAL has more than a hundred years of experience in the production management, post-processing and export of boutique coffee.
Located in the Apaneca-Ilamatepec Mountains north of El Salvador (north of Guardia Mara) at an altitude of about 1650 m (5,000 ft), the fertile volcanic mud of the Ilamatepec volcanic area provides the ideal soil for the Santa Rita farm to grow coffee. The soil, microclimate and excellent environment make it the oldest and best-built producing area in El Salvador.

All coffee trees have shade, which also serves as a habitat for local animals. Coffee is harvested 100% by hand and only fully ripe coffee similar to red cherries is harvested. This sun-treated coffee bean will be dried in the open for a few weeks so that the coffee beans can absorb the natural sweetness of the fruit and the heat of the sun.
Peel-free sun treatment and peel-free fermented honey treatment in Central America is a very innovative treatment in recent years, because in humid and rainy Central America, it is quite difficult to strike a balance between drying and quality of coffee fruits.
