About the monkeys in the tree
The estate is located on a rolling hill surrounded by the COBAN rainforest and called Thousand Island. Once upon a time, it was said that at the top of this hill, farmers would see a monkey standing on a hundred-year-old tree every morning. "YAXBATZ" means "monkey standing on a tree" in the ancient Mayan saying. So the local Mayans call the hill "YAXBATZ" (monkey in the tree). The owner of the manor knew the legend a hundred years ago and named the manor YAXBATZ. Here, many mythical stories go on with the coffee.
The Monkey Manor in the tree is a Coban producing area located 1400 meters above sea level in northern Guatemala. This area has a tropical rain forest climate, with only two seasons a year-heavy rainy season and light rainy season (dry season but very short), foggy and high humidity, and the cultivated soil is mostly limestone and soil. Because of the abundant rainfall, after the coffee is made, it is often dried by machine to keep the focus of coffee flavor locked.
There are many hills and hills in the Coban area, but there will be a vortex-like terrain between each hill. Rain Water will concentrate on these vortex topography. Although the rainfall is abundant, Rain Water can quickly discharge the crops, so that the crops will not be too wet. Also because Rain Water is rich, coffee can grow fast and the texture of beans will be relatively soft.
The representative bean of the manor, MudoNovo, is one of the Arabica Tibica strains. The variety flavor is very special. It is planted at 1400 Murray 1550 meters above sea level. Unlike the taste of Bourbon, it has jasmine, rich flower and fruit aroma, maple syrup sweetness, slightly sour fruit, and beautiful cocoa flavor. Huigan is cocoa and fruit notes, very unique beans.
Due to the rich rainfall of Coban, the beans are dried by machine, so the beans are dried evenly, the flavor is more balanced and the sour taste is mild. MudoNovo, on the other hand, has a softer texture, which is more suitable for medium and shallow baking; it is worth mentioning that it won the best single-cropping bean in the Coban region in 2015. The special chocolate taste is the most important feature of this bean, which tastes like fruit chocolate.
