About Elton Farm

Elton is a family-run farm in Mbeya in the Mbozi district. The Elton family bought the farm and operated it themselves in 2006, employing about 50 workers to help harvest coffee cherries during the harvest season. Two main varieties are grown on the farm: local bourbon N39 and Zambian Mazabuko, which are mostly treated with traditional washing, that is, fermentation is used to remove wet and sticky pectin, and then the raw beans are dried on an elevated bed.

This year, Elton decided to try sun treatment: dry the whole coffee fruit directly for 30 days, and then use the machine to remove the coffee seeds from the pulp, resulting in more fruity, mellow, but low-acidity coffee. The climate of Elton farm is quite suitable for sun treatment, and the cup test also confirms that the result of raw bean treatment is good.

Dry aroma with obvious original fruit tone, belongs to the typical sun-treated flavor, suitable for Ethiopian well-known Harrar sun-treated coffee lovers.

The nature of the coffee is still bitter and sweet, which is more obvious when roasted deeply, but in the range from medium roasting to medium to deep roasting, this coffee exudes the aroma of ripe berries, showing the coarse sugar sweetness of dried plums and dates, as well as dark drupes. Medium roasting + brings out the black cocoa base flavor of coffee, as well as the embellishment of ripe BlackBerry juice, with an almost wine-like finish. The most suitable roasting degree for this coffee is medium roasting + medium to deep roasting, which will bring out aromas similar to leather or fresh cedar.
