This time the baking quantity is 500g, first take 100g sample to estimate the defect ratio. The water content is high, the raw bean is emerald green, the bean image is very beautiful, and there seems to be a lot of silver skin attached to the surface. Pick out defective beans 1.7g, a few overfermented, some shells, chopped beans, unripe beans, but generally quite beautiful. After picking, there are about 488g left.

The input temperature is set at 180 degrees, and the return temperature is about 58 seconds and 96.5 degrees. Because the size of the coffee is the same and the water content is very uniform, it will not be too hard to bake. After a burst, the bean temperature will be 203.3 degrees. The baking time is about 10 minutes and 00 seconds. The weight after baking is about 428g.

After 20 hours, the dry nutty aroma was grinded with 15g and watered at 92 degrees 210cc. The wet aroma was slightly citrus, ripe and full-bodied. The fragrance of citrus honey brings out the taste of fruit juice, and the tonality of nuts begins to emerge after the middle section. The feeling of tail rhyme is a bit similar to oolong tea.

I think of El Injerto's Native, which is an inexpensive version of Guatemala's top manor items. However, the sweetness of Nativo and the fineness of the grease seem to be slightly better, and the price is also slightly higher. But Santa Felisa orange honey is excellent in terms of refreshing flavor, sweetness, and cleanliness. Using it for SOE or siphon cooking should have good results.
