St. Defina Manor (Finca Santa Delfina) is located on the high-altitude hillside of Kiche Province. It not only has rich water sources, but also has diverse biosphere, primitive environment and fertile soil, mainly sandy clay, rich nutrition and good drainage. A variety of cash crops, beef cattle and cardamom are grown in the lower elevations of the manor, while coffee is grown in areas about 1000-1400 meters above sea level, with many different varieties. The estate, currently the only production farm around it, has particularly affected the area after more than three decades of civil war in Guatemala, making it impossible for the region to engage in any productive industrial agriculture. Arenas Manor (The Arenas Farm) created a very close and closed community and was the only estate that could survive attacks by guerrillas and troops. The community will protect the interests of the manor because the manor is the focus and focus of community development.
Most of the estates are planted with Caturra and Bourbon. The goal of the manor is to continue to develop and keep trying to find varieties with high productivity and high quality that are suitable for planting in the microclimate of Kiche province. This batch is mainly Caturra and Bourbon, showing the cleanliness of washing treatment, with the flavor of drupe, wheat tea, red berries and caramel.
