Last Updated: 2024/11/02, Coffee is an out-and-out import, and sweet potatoes are our typical specialty in southern Fujian. When these two kinds of delicious food are combined together, what kind of "spark" will it produce?

"sweet potato" helped him win the crown.

Lim Dong-Won is a famous figure in Taiwan's coffee industry. In the first Taiwan Coffee Masters Competition held in 2004, he won the championship with a cup of creative coffee called "coffee." Yesterday, the leading newspaper reporter dialed Lim Dong-Won 's phone with curiosity. After listening to his introduction, people couldn't help salivating over this cup of coffee.

To put it simply, this creative coffee consists of four processes: first, the steamed sweet potato is mashed with milk, rock sugar and brown sugar to make the sweet potato paste on the bottom layer; the second layer is the coffee made by cold shrinkage with special skills; then use a milk bubble to beat the milk into cold foam and put it on the top layer. Then squeeze the pre-baked caramel potato chips with whipped cream, put in a coffee bean, and a cup of creative coffee is made.

Why did you choose sweet potatoes? Lim Dong-Won says that Taiwanese often compare themselves to sweet potatoes, and it is also a symbol of southern Fujian culture. "everyone has eaten sweet potatoes, but no one has ever tried what sweet potatoes taste like when combined with coffee, so I try to make them." The results of the experiment were so ideal that Lim Dong-Won succeeded in only two weeks. "if you mix it, you will be surprised that the taste of coffee and sweet potato is gone, forming a whole new flavor."

Coffee pull flower "pull" into an expert

Lim Dong-Won is also known as the Coffee Flower Master in Taiwan. He has published the book "the perfect encounter between Espresso and Milk", which teaches people how to form wonderful patterns in the process of pouring milk. "when I published this book, there were only leaf and heart-shaped flower patterns on the market, but there are more than 30 kinds introduced in my book, and the one we are most familiar with is butterflies." In addition, there are swans, conch, jellyfish, and so on. Lim Dong-Won has become an expert in coffee drawing because of his ever-changing techniques. He has been invited to teach in Guangzhou, Shenzhen, Hangzhou and other places on the mainland.

Coffee shops also sell T-shirts and handmade soap.

In 2004, Lim Dong-Won opened a coffee shop in Taipei. It has a very special name "GABEE." taken together, it means "coffee shop" in Hokkienese. "anyone who hears it will know that we are very local coffee shops, and we are marketing in such a playful way."

In addition to winning seven championships and runners-up in the Taiwan coffee competition, "GABEE." They have also represented Taiwan in the World Series for three years in a row, and now they are trying a new mode of operation, hoping to open up a more diversified path of development.

Lim Dong-Won said that in their coffee shop, customers can also buy a lot of surrounding products, such as T-shirts, cups and handmade soap made from coffee grounds. He now plans to combine his coffee brand with other brands, including established pastry shops, cup companies or biotech enterprises. "the combination of the communities of both sides will add points."
