History

Bailey Sweet Wine is a wine developed by Ireland Gilbeys, a subsidiary of the International Brewery Group (now Diageo) in 1971, and was introduced to the market in 1974 as the first Irish creamy wine. The name "Bailey" is fictional and comes from the London Millennium Bailey Hotel (Millennium Bailey's Hotel). [2] [3] Bailey liqueur is produced in Dublin.

Production

Most of the alcohol in Bailey liqueur is produced by whey fermentation. Using an emulsifier containing plant essential oils, the alcohol liquor, cream and a variety of Irish Whiskey produced by fermentation are blended evenly to form an emulsion [4]. This process prevents alcohol and cream from being separated from each other during storage. The formula of Bailey liqueur also includes sugar and some herbs, as well as other secret ingredients [5].

According to the manufacturer, the wine does not contain preservatives because the alcohol in the wine can play a good role in preservative. The cream used in production comes from Glanbia, an Irish dairy company. Glanbia's plant in Calvin, Va., which produces a range of whole milk powder and fresh cream, has been a major cream supplier of Bailey liqueur for more than 30 years.

Storage

The manufacturer claims that Bailey liqueur has a 30-month shelf life and guarantees that its taste will remain the same for two years after it leaves the factory, whether it is opened or not. Bailey liqueur can be stored in the refrigerator to avoid direct sunlight and the temperature range is 0-25 ℃ (32-77 °F) [6].

Drink

Bailey liqueur can be drunk alone, with ice or as an ingredient in cocktails. Bailey liqueur can also be used as a substitute for cream or sugar in coffee.

Because it contains cream, Bailey liqueur condenses when it comes into contact with weak acids, such as lemon juice, tonic or various wines. Although this result is not desirable, on the contrary, some cocktails take advantage of this property of Bailey liqueur, such as "car bomb" cocktails.

Version

In 2003, Bailey launched the "Baileys Glide" version of sweet wine, which aims to target the ALCOPOP market and stopped production in 2006 [7].

In 2005, Bailey introduced mint chocolate and creamy caramel versions, which were initially sold at UK airports and then rolled out to its main markets in 2006, including the UK, the US, Australia and Canada.

In 2008, on the basis of the results of the above two versions, Bailey launched the coffee version of sweet wine [8].

At the end of 2010, Bailey launched a hazelnut-flavored (hazelnut) version of sweet wine in the UK.

In 2011, Bailey launched a cookie-flavored version of liqueur.

Currently, Baileys Gold is trying to launch a new flavor version at major European airports-Kimberley [9].

In 2010, Bailey began producing its own non-alcoholic coffee cream.
