Supercritical CO2 extraction of caffeine is done by allowing coffee beans to absorb water, expand to twice their size, loosen the caffeine molecules in the beans, add carbon dioxide and apply greater than 100 atmospheric pressure (Atm) to the water, so that the water and carbon dioxide mix to create a soda environment. Carbon dioxide acts like a magnet to caffeine molecules, and when caffeine is captured by carbon dioxide, caffeine begins to move.
