Grinding thickness

Extraction time
As mentioned above, the extraction time depends on the grinding thickness of your coffee powder. In general, the finer the grinding, the shorter the extraction time, and the thicker the extraction time, the longer the extraction time, as when extracted with hot water.
Ice droplets usually take 6-8 hours, as long as try to control the dripping rate to 1-2 drops per second (or 7 drops for 10 seconds), 6-8 hours to complete the ice drops, to achieve the best flavor, need to put and refrigerator 1-2 days before drinking.

Extraction mode
When using the same beans and the same grinding thickness, we find that ice droplets taste better than ice extract. I personally think ice drops of African beans (Yega, Sidamo, Kenya) taste smoother, cleaner and more fruity.
In addition, using ice droplets can save the final step of filtering the coffee liquid.

Use ice cubes or water close to 0-5 ℃. For better and more consistent taste of coffee, try to use filtered water.
In terms of flavor, high temperature will make the tannic acid in coffee decompose into pyrowu acid, resulting in a sense of acidity and bitterness. Studies have shown that the acidity in cold-extracted coffee is 67% lower than that in hot-extracted coffee. Therefore, compared with hot extraction coffee and iced coffee with ice after hot extraction, the coffee made by cold extraction process has a lower acidity and is generally welcomed by people.
In addition, due to the conditions of low temperature and long contact with coffee powder, only small molecular flavor substances, such as flower and fruit flavor, are extracted, while those with larger molecules, such as smoky flavor, baking flavor, etc., are difficult to extract. This is why the cold extract coffee does not smell very shocking to the senses, but it tastes smoother, fragrant, hierarchical, obvious and without greasy feeling.

-Coconut milk iced coffee-
It sounds a lot like milk coffee from Hong Kong cafes, but it feels sweeter. There are also gradual layering, ↓.

1. Pour 1 cup of water and 1 cup of coconut milk sugar into the pan and stir over medium heat until the sugar dissolves. Then pour in 1 tablespoon of cinnamon, ginger, cloves and cardamom and stir until they all melt.
two。 Take out a can of full-fat coconut milk and pour it into another pot. Boil and turn it to low heat, then cook slowly for another hour until it thickens and let cool.
When drinking, first scoop 2-3 tablespoons of syrup (finished in the first step), then pour in the right amount of iced coffee, and finally pour in 2-3 tablespoons of coconut cream (finished in step 2).

Sweet almond essence (almond extract) goes well with bitter coffee. Add 1 scoop of 2 tablespoons almond essence and 2 slices of oranges to iced coffee. Stir and serve. The taste will be more sour with lemon!

First scoop two balls of ice cream into the cup, and then pour in the iced coffee. As for the taste of ice cream, the most classic is vanilla, chocolate or sea salt is also good!

Add some sea salt to caramel, it will taste richer and sweeter!
Caramel ingredients: 1 cup of sugar, 1 cup of water, 3 cups of heavy cream, 3 tablespoons of butter, 1 tablespoon of sea salt, 2 tablespoons of vanilla essence.
First pour the sugar and water into the pot and bring to a boil over medium heat, stirring all the time. After the sugar is dissolved, turn it to medium heat and continue to boil for 7-10 minutes (without stirring). Remove the pot until the color in the picture, do not heat it again.
Pour the heavy cream into the 3x4 measuring cup and stir. If the sugar condenses with the cold cream, it can be dissolved by heating and stirring over low heat. Finally, stir in the butter, salt and vanilla extract.
