Harald, Ethiopia
Ethiopia is the birthplace of coffee, and Harald is one of the four holy cities of Islam. Not only that, Harald is also the most famous boutique coffee producing area in Egypt. Is the coffee produced here as desirable as described in coffee books?
The coffee baked this time is Grade 4 grade coffee from Harald. Grand 4 is the highest grade, because Harald coffee is treated by dry method, and dry coffee grade 4 is the highest. Because it is a new bean with high moisture content, the appearance of raw bean is dark green and emits attractive luster. There is a strong fruit aroma, vaguely similar to the aroma of wine. It makes people have high expectations for its taste before baking.
Shallow roasting can better reflect the acidity of coffee, so the degree of roasting to high will stop. Because it is a new bean, the weight loss rate is high, up to about 18%. Chewing raw beans, there is no obvious bitter taste, on the contrary, it is sour and sweet taste outstanding, but also similar to cream aroma, the performance is very prominent.
Using Ditting KF804 grinder, the degree of grinding is 8 (the roughest degree of grinding is 9 as marked by the machine). The extraction amount of 10g powder is 120cc. The extraction water temperature is 91 ℃ and the extraction time is 1 minute 08 seconds. How does the coffee taste like this? Let's start with a few separate aspects:
Dry aroma: dry aroma is very obvious, with obvious floral aroma.
Wet aroma: wet aroma is very rich, full-bodied, obvious flower and fruit aromas.
Acid: the fruit is sour, clear but not irritating. Divergent, lasting for a long time. By contrast, there is little bitterness.
Sweetness: the sweetness is obvious, with a sweet aroma similar to chocolate.
Mellow: moderate thickness, good texture, but not very slippery feeling.
After rhyme: the aftertaste is long, especially the sweetness spreads in the mouth and lasts forever.
Richness and balance: fruit acidity is outstanding, sweet taste is rich, bitter taste is less, faint chocolate taste. The overall taste is rich and balanced.
Overall, the light baking Harald, the overall taste is clean and rich, the taste performance is more balanced. In particular, Harar's rich and varied sour and sweet taste is outstanding. It gives people a natural feeling that there are not too many impurities in it. This is also the more obvious feature of Ethiopian coffee, there is always a different flavor characteristics to leave a deep impression. In such a hot summer, a cup of pure and natural Harald coffee will certainly make you feel calm and natural.
