What are the flavor characteristics of Pacamara, the San Guava Manor in Farahannis, Guatemala?
Guatemala COE fifth place
The Fraijanes volcano in the Fahannes region is quite high above sea level and the soil is rich in pumice. The Farrakhan Plain is still an active volcanic area, so the coffee in this area is similar to that of Antigua. However, Rain Water's abundance, high and varied humidity, and large temperature difference give the Farrakhan Nice Plain a very different flavor. Saint guava Manor was founded in 1905, but it was not until 1985 that coffee was grown. The fourth-generation Juan de la Cerda Colom and his son Juan Diego are now in charge of the manor. One of the reasons why the coffee grown on the estate is very special is that because of the natural biodiversity of the place, the native trees are shade trees for coffee. The second reason is that the entire coffee production process is strictly controlled, and there is a consistent process from planting and management to harvesting and post-processing. The manor uses an efficient ecological treatment plant to remove the peel of coffee fruit in a dry way. After using the circulating water system to start processing coffee, clean the coffee fruit with clean water and then remove the residue. The Pacamara variety originated in El Salvador and is formed by the combination of Maragogype and Pacas. Pacas is a Bourbon system, similar to Caturra. While the coffee tree is very majestic and the cherry fruit is the size of a walnut, Maragogype originated in Brazil, which is commonly known as the elephant bean with the largest number of coffee beans of all varieties. Variety Pacamara is one of the coffee urgently acquired by the world's top coffee industry a few years ago.
