In the early days, coffee shops in Taiwan mostly brewed coffee in both hand-made and race-style ways, but now most coffee shops add an extra Italian machine for business use.

Let me first briefly explain a few proper terms mentioned below by Brother Jane:

Italian coffee machine type: manual or pull handle type, semi-automatic, fully automatic, general professional coffee shop is mainly semi-automatic or pull handle type.

Single boiler: single boiler is the same boiler for hot water, steam and water for brewing head, so the water temperature will be unstable during cooking. In the domestic type of Italian machine or pull type Italian machine is mostly this kind of boiler.

Heat exchange boiler (sub-master boiler): this kind of boiler structure is basically divided into external large boiler and internal small boiler. Among them, hot water, steam and water for flushing and cooking head are heated in a large boiler, while the heating mode of the inner boiler is heated by heat exchange with a large boiler. Therefore, in the continuous cooking, the water temperature of the cooking head will not be greatly affected, unless the continuous cooking amount is quite large.

Double boilers: one boiler provides hot water for flushing head, and the other boiler is responsible for general hot water and steam water, so it is independent temperature control. The continuous cooking capacity depends on the size of the boiler.

Multi-boiler: the heating method of multi-boiler is very similar to that of double boiler, except that each cooking head has its own independent boiler and can set its own water temperature, while hot water and steam are made up of water from large boilers, so this kind of multi-boiler, cold water is added to the large boiler and will not affect the water temperature of the cooking head, so that the water temperature of the cooking head can be more constant. In general, the Italian type of double-punch head has three boilers, and the three-flush head has four boilers. Now this kind of Italian machine is a new trend.

Pre-soaking (Pre-infusion): first put a little water in the head, then stop for 2 seconds or 7 seconds (this Italian machine can set the number of seconds, and some machines with pre-soaking function are fixed seconds) to make the coffee powder moist, on the one hand, it will not cause the coffee powder to be directly scalded by the high temperature water without pre-soaking, on the other hand, it can make the coffee powder in the whole filter cup fully hydrated, but it will not have enough water to bring out the flavor of the coffee powder. And there is a pre-impregnation function, which can make the coffee extract more evenly.
